Raw Açai Cheesecake with Blueberries.
Happy Birthday MrB!
Believe it or not this cake is Vegan, Paleo, AIP, gluten free, refined sugar free, and surprise surprise the teenagers even enjoyed it although did say they would have preferred the Keto version with some whipped dairy cream.
Along with nuts, the base also has cacao nibs which add to the chocolatey crunch..... Yum 😋

If you’re craving a treat that’s sweet and savoury instead of reaching for crisps or popcorn (covered in refined sugar and not so healthy flavourings) why not opt for a quick and easy to make snack of figs wrapped in prosciutto. �Figs are high in dietary fibre and also contain prebiotics, which help support the good bacteria in the gut and mixed with the saltiness of a very thin slice of prosciutto it’s the perfect pairing for that time of day when you’re peckish but prefer a healthier option. Just don’t go overboard as the sodium content of the prosciutto is high!

Gosh it’s been a busy few weeks with too much overindulgence over the festive season!
So I’ve decided the best way to start the new year is to make some gut friendly “flackers” high in omega 3 fatty acids, protein and dietary fibre and very delicious with smashed avo, your favourite hummus or even just on their own and ready in the pantry when you get the urge to have something with a savoury crunch!
This batch are made with a mixture of flax, chia, sunflower, pumpkin and sesame and I have simply added some dried mixed herbs, fresh finely chopped parsley and some coconut aminos for flavour.

There’s something rather decadent about a fresh moist carrot cake 🥕 drenched in lemony 🍋 cream cheese icing. This one is gluten free with the addition of walnuts for a bit of nutty crunch and pineapple for moisture.

We’ve barely entered October and I’m beginning to see Christmas 🎄 decorations already 😬, which means my lovelies it’s time to get your Christmas cake orders in so I can start macerating (I ❤️ that word!) the fruit to make sure it’s extra moist and aromatic with flavour. 😁Remember you can order them gluten-free, refined sugar free, dairy-free and vegan!

These have to be my favourite go-to breakfast muffin, perfect for a mid-morning meeting with a cuppa.
The mixture can be made the night before and baked first thing so they’re lovely all squidgy and warm.
It’s a recipe that I have adjusted to make it gluten free, refined sugar free, gut friendly and can be made vegan by using chia or flax eggs. (I used eggs as the client did not request vegan)
It’s also so versatile you can change the fruit/veg to suit your needs, these ones have bananas 🍌 but I have made them using dates, steamed apple 🍎 , even carrot 🥕, the options are endless 😁😋

Who doesn’t love chocolate? It tastes even better when gut friendlier 😁 and refined sugar free.
These pecan nut, chia and date bites are smothered in this easy to make vegan chocolate.
Coconut butter
Coconut oil
Date/coconut/maple syrup, just enough to sweeten slightly
Cacao power
whisk all ingredients in a saucepan over a low heat until dissolved and smooth. Drizzle over bites or into a greased container.
(You can add peppermint essence for a fresh minty flavour, then pour into silicone moulds and refrigerate until set for a little sweet treat with your coffee ☕️ too 😋😋😋)
