Meet the team...

Lee, Vinny, Vinny Lee, Vincenzo

All round good guy, good friend, tamer of flames, smoke influencer, great chef and a great addition to our team.

You will often find him dancing by the fire, spreading joy, telling tales of days gone by and explaining the work we do around the fire.

Vinny loves testing his strength on our seasoned applewood, eating chicken, and supporting his beloved Sheffield United. If you see Vinny working the fire at one of our events, say hello, he loves a chat.

Happy Sunday

Almost a week since we hosted our first Feast by Fire Sunday Session in the woods.

What a day, what a week! We are still gathering our thoughts, so happy to have held our first event in this space we have been working so hard on.

Huge shout out to everyone of our wonderful guests, there would have been no event without you. We hope to see you again very soon

Grateful for the support and graft of friends and family whilst pulling this together, of professionals who have become friends through the journey.

We are looking for a chef/aspiring chef/kitchen assistant to join our events team.

Be part of a small friendly team providing wood-fired events across Yorkshire. Spend lots of time outdoors learning about open fire cooking with seasonal produce.

We are accepting applicants of any level and experience you just need to bring with you enthusiasm and a willingness to learn. Pay rate is above minimum wage and upwards depending on experience. Up to 30 hours a week are available, due to the nature of the work this is mostly weekends with some mid week work.
We are based near Stamford Bridge, great for anyone local or able to travel

The very first, when COVID slowed us down but couldn't stop us. Since then we have popped up with our fire fuelled feasting in many a wild and wonderful location, and built an event business with open fire cooking, sustainability and developing our connection to nature at its core.

4 years on and we are putting down roots and about to hold our first Feast by Fire in our own woodland! Ever since the first event this has always been the plan and we can't wait to share everything we have been working on and developing.

Sunday the 30th June will be our first event. A lazy Sunday afternoon in the woods enjoying a wood-fired feast followed by live music from Gary Stewart

Tickets will be on sale very soon, keep an eye out as we are only selling a limited number of tickets for our first events.

bavette steak lightly cured then quickly seared directly on the coals, hand chopped, seasoned with our burnt onion salt and . Dressed with our own pickles, foraged herbs, English mustard emulsion and a little more of our onion salt/ash to serve.

Very difficult to share

We are coming to the end of the season for venison but there is still time to enjoy it with some wild garlic.

Really simple, rich braised venison, cooked gently for hours then pulled apart, cooking liquor reduced and stirred through the meat,chilled, portioned,coated then fried. So good

Back in 2017 was just a vague idea, a reaction to the broken food system I was working within, a way to do things differently.

I was sharing these ideas with my very good friend , some of you will know him but many of you will not. If I had an idea I shared it with him. He had the ability to shoot down a s**t idea and nurture a good one. I miss talking to him so much.

At that time we were planning an event on his patch of land over in Wales. Alongside working as a firefighter and an arborist, he was turning dodgy doodles into awesome logos, and working a plot of land, producing food following organic principles.

The idea was to lay on a feast, I would bring the fire, he would provide the produce and what he couldn't provide we would source within just a couple of miles to complete the menu. Sadly, for various reasons we could not get this event done but the seeds were sown.

Last year we lost Rush following a long battle with Melanoma. The world is poorer without him but would never have been as bright without him. There is so much I wish we had done together but I am grateful for everything we did share together, everything he taught me and continues to teach me still, I would not be where I am, doing what I love without knowing him. We go on, getting the most out of this life the best we can, as he did.

Today would have been his 40th birthday, today we celebrate him and the way he lived life.

Rosehips

A tasty wild edible, still available now in late November and in abundance. As long as they are a vibrant red they are good to pick.

The hips from all rose varieties are edible, the most common to be found growing wild are the dog rose and the field rose.

Tangy, floral and sweet, even sweeter following a light frost or two they are a wonderful choice for a fruity syrup. We have also used them to make wine and vinegar and in an immune boosting tea. They possess huge amounts of vitamin C, much needed in these winter months. Isn't it great how nature provides like that?! We often have some stashed in the freezer so we can make a quick tea when we are hit with a nasty cold.

Recipes for rosehips are pretty limited to tinctures and syrups due to the tiny little hairs inside which can really irritate the throat if consumed. As long as the recipe allows you to pass the hairs through a fine cloth you will be fine. We have removed the hairs by hand before, to be able to use the fruit bodies as a whole but in my opinion it is really not worth the time and effort.
