🍅My Quick and Simple Sunshine Tomato Sauce recipe 🍅

Hello, hello it’s been a while since I shared a recipe so here we go. . .
It’s a dank Monday afternoon here and
I have 3 punnets of fresh cherry tomatoes left over from the weekend, so I’ve made a yummy pasta sauce for tonight and several pots that are now cooling, ready for the freezer.
Here is my recipe:
1 chopped onion
1 minced clove of garlic
3 punnets of cherry tomatoes
A handful of olives 🫒 ( or capers)
1 handful of Fresh or dried green herbs such as basil, marjoram, thyme, mint, rosemary, 1 bay leaf
A tablespoon of honey or 1 tablespoon of sugar ( optional)
If you have it lurking in your fridge, like I do: a parmesan rind for extra flavour
Method
Take a heavy based lidded pan:
Add 2 tabs extra virgin olive oil
Soften the onion and garlic
Add the tomatoes
Herbs, olives, Parmesan rind
Salt and pepper
And sugar/ honey if using
Pop the lid on the pan and simmer until the tomatoes are soft
If the sauce looks like it’s drying out add 1/4 cup of water
Blitz everything until smooth and serve 🥘 🍅 🌿
(if the cheese rind is still hard remove it first, otherwise there might be a tomato explosion in the kitchen!)
This sauce is really adaptable: lovely with pasta, chicken, add to a bolognaise or veggie lasagne base.
