Obsessed with whipped ganache. I know, I keep repeating myself but I really love working with it!
Getting ready for my first market stall with at this weekend. I think tickets are almost sold out! Very exciting stuff!

Oh almost forgot: Mexican hot chocolate macarons will feature there. Here we have ganache infused with cinnamon, cayenne (just a pinch) and vanilla with a FF (fresh fluff) center and macro marshmallows on top. I’m coining FF. I did try store bought fluff but I hate it. So I made it. Tastes better, pipes better, looks better.

I can’t believe how much I love these. They are candy cane white chocolate whipped ganache pink macs and they came out like a winner! Stay tuned for the reel but I’m the meantime here’s the recipe for the ganache:

1 cup cream in a mixing bowl
1 cup white chocolate, melted
4 drops peppermint extract
4 crushed candy canes - normal sized, not the mini ones

Melt the chocolate. Add the essence.
Pour into the mixing bowl with the cream and whip using a hand be**er until soft peaks hold their shape. This is a fairly quick process and you don’t want to over whip so go slowly.

Sprinkle crushed candy cane over piped ganache. In this photo I also dip the macs in chocolate and sprinkle more crushed candy cane.

Repeat festive flavour from last year. Mexican hot chocolate: milk chocolate ganache with cinnamon, a pinch of cayenne and vanilla surrounding a dollop of homemade fluff. It’s so darn good I polished off rejects myself and did not offer any to the family. And I don’t feel bad.

One of my favourite holiday flavours, cranberry with an orange cheesecake buttercream. I’m posting a reel later but my cranberry jam is super easy:

250g fresh cranberry
100g light brown sugar
Juice and peel from one orange
Pinch of cinnamon (optional)
Allow all ingredients to slowly simmer in a medium pot with a lid, stirring occasionally until thickened.
Anywhere from 20 minutes +.
Put the mixture into a sealed container or jar and allow to cook before refrigerating.

I’m making special egg macarons for Easter, individually boxed as seen here, with chocolate ganache and homemade marshmallow fluff (no gelatine!) They’re approx 14cm high and decorated.
