We have been so inspired by our English countryside hedgerows, here is another wild recipe. This natural elderflower cordial is so delicate, a gorgeous flavour for cakes, cocktails, or just a simple drink with water and ice. ✨✨

Here is our full recipe:

2 and a half mugs of elderflower heads
2 mugs of organic sugar
4 mugs of water
2 juiced lemons
Zest of 1 lemon

It is a very simple recipe, something to do with children during the lockdown if you have access to the flowers!

1. Pick flowers off of their stems (don't worry, you won't get all the green off, just as much as you can!)

2. Boil water and sugar, dissolving the sugar, let gently simmer.

3. Zest one lemon, then juice both and add this to the flowers in a big heat resistant bowl.

4. Pour the simmering water over the flowers and let sit for 48 hours. Cover with a tea towel once cooled.

5. After 48 hours, strain the mixture through a fine mesh or muslin cloth.

Remember to have your sterilised bottles ready! This makes around 3 medium size bottles (3 X 500ml)

This cordial keeps in the fridge for up to 2 weeks.

And that's it! Super easy, super delicious.
You could experiment with less sugar, or coconut sugar, but here at The Kitchen At Blackberry Farm we are being a bit naughty and enjoying the taste of childhood 😂☀️

Foraged Dandelion ‘Honey’, inspired by the beautiful .by.fern 💛 sweet, slightly floral, delicious on desserts, toast and crumpets!

Here is our recipe:
Makes 2 small jars

2 cups of dandelion heads
2 cups water
1/2 cup sugar (we used half coconut sugar, half unrefined cane sugar)
2 tbsp cornflour
Juice of one lemon 🍋

Method:

Go out to an open space, or your garden, and pick 2 cups full of dandelion heads.

Fill a medium bowl with 3 cups water and 1/2 apple cider vinegar. Let the heads sit for 1 hour.

Rinse dandelion heads well in water. Cut all green parts off of the heads, leaving the dandelion petals and pollen only.

In a small pan boil the petals and pollen with the 2 cups of water. Let boil for 5/10 minutes.
Let sit in a clean bowl, covered for 24 hours.

The next day, pour the mix back into a small saucepan and add the sugar and lemon juice. If you would like the ‘honey’ to be more of a lemon syrup add the zest of the lemon.

Bring to the boil, allowing the sugar to melt. Mix well.

Strain mixture to remove the petals and pollen, then return back to the heat.

Mix the cornflour in a separate bowl with a tablespoon of water. Mix very well.

As you pour the cornflour and water mixture into the saucepan, stir well. Continue to stir well as the cornflour starts to thicken the mixture.

Take the pan off of the heat and allow to cool.

Once cooled, pour mixture into sterilised jars.

If you do not have cornflour, you can replace with 1 tsp of agar agar, or 1 tablespoon of fruit pectin.

This Dandelion ‘honey’ will last up to 4 weeks in your fridge, although it is best used in the first 2 weeks.

You can also tweak the thickening agent to make it more like a syrup, or a thicker consistency.

We hope you enjoy this lovely recipe and can make good use of your garden weeds! You can also use the dandelion leaves for salads, soups and stews! 🌿
