We have been so inspired by our English countryside hedgerows, here is another wild recipe. This natural elderflower cordial is so delicate, a gorgeous flavour for cakes, cocktails, or just a simple drink with water and ice. ✨✨
Here is our full recipe:
2 and a half mugs of elderflower heads
2 mugs of organic sugar
4 mugs of water
2 juiced lemons
Zest of 1 lemon
It is a very simple recipe, something to do with children during the lockdown if you have access to the flowers!
1. Pick flowers off of their stems (don't worry, you won't get all the green off, just as much as you can!)
2. Boil water and sugar, dissolving the sugar, let gently simmer.
3. Zest one lemon, then juice both and add this to the flowers in a big heat resistant bowl.
4. Pour the simmering water over the flowers and let sit for 48 hours. Cover with a tea towel once cooled.
5. After 48 hours, strain the mixture through a fine mesh or muslin cloth.
Remember to have your sterilised bottles ready! This makes around 3 medium size bottles (3 X 500ml)
This cordial keeps in the fridge for up to 2 weeks.
And that's it! Super easy, super delicious.
You could experiment with less sugar, or coconut sugar, but here at The Kitchen At Blackberry Farm we are being a bit naughty and enjoying the taste of childhood 😂☀️
