Quick pitta recipe - works a treat, soft fluffy pillows of carb goodness 😋

* 250g plain flour, sifted
* 5g salt
* 5g sugar
* 4g dried yeast, dissolve in 3 tbls warm water
* 85ml water, room temperature
* 90g plain yoghurt

• Mix all ingredients, knead until ball is formed

• Rub 1 tsp olive oil all over the dough, cover bowl loosely with cling film and allow to rest for 1 hour

• Divide dough into 4 then roll into neat balls, cover loosely with cling film and rest for 30 minutes

• Roll out into a circle 1 cm thick

• Heat a non stick pan for 3 minutes then cook the pitta for 30 seconds, flip and cook for 30 seconds, then flip again for 30 seconds

• After this flip one more time and wait for the pitta to puff up completely, then flip for 15 seconds

• You can brush olive oil if you want, I recommend waiting 5 minutes before eating.

They can also freeze extremely well if you want to make a batch! Enjoy 😊
