Some pics from a couple of jobs yesterday. One client commented on how good the ham looked when I delivered it. I cook the gammons myself, then roast them with sugar and cloves. I've always cooked the beef myself too. The bit of striploin in the photo was cooked slowly to 55c to keep it pink. Beautiful!
Salads; Asian Coleslaw, Tabbouleh, Chickpea, Chorizo & Roasted Pepper & Potato with Red Onion, Grain Mustard and Fresh Herbs.
The strawberries need no explanation - I wonder how many I have dipped in the past 26 years! The brownie is of course homemade too to, so it's nice and gooey!

I will be cooking gammon and beef like this for Christmas orders along with other items. Let me know if you would be interested in some. More details will follow on this.

On Thursday Epicurus looked after 100 guests at the Port of Tyne Innovation Week conference final day. I provided staff from 7am to prepare and serve tea/coffee/juices for delegates on arrival. We topped them up and served pastries at 11 for the first break.

For lunch, I prepared the following Bowl Food from our ‘field kitchen’ which we set up in the car park/Luton van. Unfortunately it was 2c all day, so my fingers were numb by the end of service!

Lunch was…

Tempura Chicken with Honey Mustard & Sesame Soy Sauce, Toasted Sesame Seeds
Brown Ale Battered Fish & Chips, Homemade Tartare Sauce
Slow Cooked Beef, Horseradish Mash
Sweet Potato Wedges, Goats Cheese, Smoked Plum Ketchup, Pomegranate & Fig (v)
Tomato & Onion Curry, Rice (vg)

For the break at 14.00, we provided more refreshments and a shot glass Raspberry Creme Brûlée.

I thought my walk in chiller was broken this morning when I went in at 04.30 to get milk for my tea as it felt a bit warm on my face. Turns out the kitchen is actually colder than the fridge by 2 degrees. The fridge was 3c! 🥶

Quick Puds…

Blood oranges normally have a season of December to May, but the I noticed them in one of the supermarkets (who always blur the lines of seasons now) recently and seeing them nudged me into getting some to make the alternative to the summer classes off lemon posset - blood orange possets. These are dead quick to make - try them at home. This will make about 6 ramekins and take you about 15 minutes.

Double cream x 450ml
Caster sugar x 125g
Juice & rind of blood oranges x 2
Blackberries x 18
Amoretti biscuits x 36

Mix together the cream and sugar and bring to the boil and then continue to boil for 3 minutes taking care it does not boil over onto the stove or you will curse me forever! Depending on whether you use gas or electric, you may need to tweak the dial up and down to keep it boiling, but not to spew everywhere!

Once the 3 minutes is up, take off the stove and add the juice and rind, mix and pour into ramekins, glasses etc. Now pop them into the fridge for them to set.

When you are ready to serve, crush up the amoretti biscuits and share them between the ramekins. Don’t do this too far in advance or they will go soggy and the crunch is fab! Now, add the blackberries to a dish and pop into a hot oven for about 5 minutes. Place three on top of each dish and serve immediately.

Some from service last night. I didn’t get many of the mains as we were busy getting it all out to the right tables in the right quantities! This was a joint 18th and 21st. Dinner was family service, sharing platters and bowls on the tables….

We had a team of 14 on site preparing, serving and clearing. Long day, got to bed around 03:00, but not really sure due to the clocks changing 😂

Some from this week preparing food for 200 guests. The key for a job like this is planning and preparation off site in advance so everything comes together on site. I spent the week making chicken and tarragon pies, fish pies, beef bourguignonne, roulades, gratin potatoes, and pre portioning items for meat platters and cheese boards so the team could heat up, assemble and finish off in the marquee. We generally have limited space and resources so prepping ahead is fundamental 👨‍🍳🔥
