🧁 Cup cakes 🧁

A few weeks ago we (I say we, Emma took the brunt of this 😂) made 4684 cup cakes for UHS for a week long event they were holding.😮

I put up a time lapse video of us icing a small batch of the cakes which got a lot of interest so thought I would let you know what went in them.

(I still can’t quite believe the amount of ingredients) 🤯

To make the cakes:
🎂 80kg Caster sugar
🧁80kg Flour
🍰 6kg Cocoa powder
🎂80kg butter
🧁1280 Eggs (that’s over 100 dozen)

To make the icing:
🍰60kg Butter (that’s 240 blocks)
🎂120kg Icing sugar
🧁6kg Cocoa powder

Last week saw me wave goodbye to Jonny. 👋🏽

He’s been with us for nearly 20 years and has helped mould Wright Choice Catering into what it is today. 🧑‍🍳

Back then it was Aimee and I and we needed some help so I put an advert in the paper (yes that’s where you advertised for staff back then) had a few applicants and took a young lady on and she just didn’t work out so had to let her go. 😔

So it was back to me and Aimee again then out of the blue Jonny got in touch, it had been a few months since I had put the advert out, I asked how he had heard about the job and he said “mum found it and told me to call and go along”
(She must have been stuffing her wet shoes with old news papers and spotted it 😂)

So there it was the start of what turned out be a long relationship.
He wasn’t the most reliable or willing at the start but we stuck by each other and it all worked out just fine. In the end he did care and was willing and reliable right to the end. ☺️

We have had a lot of laughs over the years, so many memories get triggered with songs on the radio which we used to change the words to and sayings and phases that pop up in conversation bring back memories of a lot of laughs and these will be with me forever. 🤣

Not only am a losing a great chef he was also my maintenance man, he was great at fixing things and painting. 🔨

Things I won’t miss are his constant clattering and banging, radio on full volume for pop master/10 to the top and his obsession with making me jump. 🤨

I left Sam at Tithe Barn open day to come back to help the team ice and box 1500 cup cakes for tomorrow’s delivery.
The rest of the week will be making and icing the remaining 3000 🧁☺️

I have sad 😞 news and good 😊 news.

😞 Jonny , our chef 🧑‍🍳 is leaving us to go traveling with his family in November.
He has been with me for 20 years from boy to man and I am going to miss him.
I will post more about Jonny next month with some pictures of his time with us. 😛

😊 Emma , my eldest daughter is joining us to take over from Jonny. She has worked in 2 great hotel kitchens.
Then this opportunity came up and I am so glad she took it. 😌
I will post more about Emma soon and her background and some pictures of her early years at Wright Choice. 😂

It is great they can both work together so Jonny can pass on his ways and tips so you still get the great tastes you are used to and then Emma can bring in her own ideas as well over time. 🧑‍🍳

So proud of my team. 🥰

I was away last weekend and left my team to look after events.

On my return I had a message from the venue manager saying how well they had done.

Everyone did an amazing job,the food was stunning!!! You have been so friendly and the staff were so welcoming and kind to our friends and family. Beyond appreciated!

Had the pleasure of providing lunch for Princess Anne today at the Royal Navy Museum. 👸🏻
She enjoyed our sausage rolls and chocolate brownie. 😋
She spent a lot of time talking to various groups of people before heading off to other engagements.

🥳 Happy 21st Birthday to us 🥳

What a blast it has been, so many memories over the years and meeting so many great people.
We also have 2 new members of staff joining the team this month Sam who has started last week and is fitting in perfectly and we look forward to welcoming Tracey who will start mid May. 😊

It’s great being part of people’s special occasions and what better way to celebrate this than with a few words from a customer from the weekend. ☺️

STAFF NEEDED.

We have a rare opportunity to join our team.

Job will involve:
🍴Simple kitchen tasks.
🥗 Make deliveries in our van.
🍴Plating meals.
🥗Washing up.
🍴Serve at weddings and functions.
🥗Load & unload vans.
🍴Setting up for functions.
🥗Clearing down at functions.

As you can see it is a varied job as we are a small friendly team and we all do a bit of everything.

This can be full time , part time or on a casual basis, may take on 2 people and spread the job between them, will depend on who applies and what they can offer.

🚐 Must be able to drive. 🚐

Our base is in a remote location so your own transport would be ideal to get to and from work.

Such sad news about the passing of Steve Wright.

His BIG SHOW in the afternoons helped us get through the afternoons in the kitchen and we used to love playing the BIG Quiz all those years ago.

We even got a “shout out” in the afternoon once on the “serious jockin” when we were “serious hogging”

RIP Steve.

Had a routine inspection today.

Thanks to my team especially Lydia who came in every Monday afternoon to clean until she then moved to London and now Harry has taken over this role to keep our kitchen in tip top shape.

I am always getting comments on how young my team are and how efficient they are and how we go about our work in an unobtrusive way. 😊

Was chuffed to get this email from a recent happy customer who was at a Christmas party. 🎄

“ I was, before early retirement in a catering/hospitality role for all my career, lastly as Head of Catering and Tourism at South Downs College.

I was very impressed with the table lay up, quality, taste and heat of the delicious meal
and the superb service delivered by the young waiting team.
I taught food service for 6 years and was delighted to see how professionally and efficiently the meals were served and the empty plates cleared.
There is many a local restaurant that could learn
from those staff!”

I am blessed to have such a great team behind me who without I would struggle to do what we do.

We were so pleased to be part of Sophie's Legacy 10k event at the weekend. 🏃‍♂️

We cooked and served bacon rolls to the hungry runners on their return to Stubbington community centre. 🍔

Thanks so much for your custom, some people just popped in for a bacon roll. 😋💴

We were able to give the charity £450 which I am chuffed to bits with and it will help with the good work they do. 👍🏼 👏

Saturday was a day of charity events as we then went on to cook a dinner a memorial event in wallington and they had a raffle (for those that know me I do love a raffle) which I entered and I won a prize 🏆 😊 this was raising funds for a cancer charity which helps a lady from the village who was taken from us too soon.

We will be supporting this fantastic charity tomorrow at Stubbington Community centre 10-4

You can run, walk, cycle (swim) scoot, skip the 10k and then pay and collect your medal at the end.

We will have bacon and egg rolls for sale and all profits from the sales will be donated to Sophie's Legacy.

There is also loads going on in the hall as well, apple bobbing, tombola , face painting, sweets, arts and crafts, singing, dancing & massage.

Come down and be part of this great event and support this local charity.

Been really busy with wedding and private parties and worked with Kissing Gate Events with our brand new pizza ovens feeding a whopping 530 people with bbq and pizza then paella later on.
