Thank you again for all your pre-orders this week. August is usually our quietest month, but it seems you lovely folk just can't get enough of our delicious curries :-D
The curries I dropped off at The Butcher's House on Thursday have already sold out. So I'm dropping off some more Chicken Tikka Masala and Lamb Naga Vindaloo this morning. And if they sell I'll top up the stock again Saturday morning :-)

I'm dropping off the following curries at The Butcher's House tomorrow morning.
These are premium traditional "desi" Indian curries, made with meat from The Butcher's House and locally sourced produce.
Goan Chicken Vindaloo - not silly hot like the British Indian version, and cooked with traditional ingredients such as coconut vinegar and jaggery. Medium. £9.50
Malabar Chicken - a traditional south Indian curry tempered with whole spices, coconut, and fresh curry leaves. mild. £9.50
Chicken Tikka Masala - an Indian recipe based on the Glaswegian classic. Rich, creamy, and beautifully balanced with fresh lemon, tomato, and cream. Medium. £9.50
Lamb Naga Vindaloo - based on our traditional Vindaloo recipe but with the addition of Naga chilli, honey, tomato, and extra chilli powder. Sweet, sour, and fruity with a good chilli kick! HOT £11.25

Our NEW Beef Naga Vindaloo was so popular that I'm following several requests to cook a lamb version this week.
If you enjoy dal don't miss out on this week's Sri Lankan Parippu Saffron Dal, it's off the scale!
This week's mild chicken option is Malabar Chicken. Expect all the traditional South Indian flavours but without the heat.
Chettinad Chicken (pictured below) is back after a long hiatus this week. As is Beef Dum Gosht, Chicken Madras, Shahi Paneer, and Mushroom Xacuti.

The Butcher's House in Long Stratton now stocks our authentically prepared Indian cuisine.

July has blown me away with orders. It's been busy, crazy busy, with curries selling out before I've even cooked them!
The deli is still very busy on Fridays. Wednesdays and Thursdays are quieter. But as usual, I'm not doing any paid advertising, and just relying on word of mouth.
I've now got to the point where I need some help. I have someone lined up who has a genuine interest in authentic Indian cuisine. But first I need to sort out a few things, so I can afford to pay someone and take on what to me is a huge commitment.
I'm also starting something new this autumn which will run alongside Chaat Man. It's not been done before, it's closely related to what I'm already doing, and is very scalable. I think you're going to like it 😉
August is usually a quieter month. But after a busy July, who knows. This Saturday I have the Veg Thali Supper Club, and in August a Meat Thali Supper Club.
And in September I'm starting at a new farmers market.
So thanks again for all your support and custom. Our curries are selling out faster every week, so please don't forget to put your orders in as soon as you can. Cheers 👍

After a successful trial period, with rave reviews, our Kerrison Fitness Collaboration Curry is now available to order via our website.
This curry is based on our Nagauri Dhaba Dal, but with a few tweaks and the addition of finely diced chicken breast. So online you will now find it by its new name, Dhaba Nagauri Chicken.
This curry is amazing. Everyone who's tried it has loved it. It's rich, smoky, and medium+ in heat/spice. And of course, it's perfect for a post-workout meal.
I've been training at Kerrison Fitness ever since I opened the deli. Joe is an amazing trainer. I can't recommend Joe enough if you want to get fit in a relaxed and professional environment. And of course, once you've worked off those calories I'm just next door to help you put them all back on again :-D
Our Beef Naga Vindaloo has received some wonderful reviews. It's hot, but it's still deeply flavourful. And may even need a little more naga chilli to take it into our "hottest" category.
There are a few left from last week that went straight into the freezer on Saturday. If you're thinking of bagging one of these beauties I suggest you get in early.

Authentic Desi Indian Cuisine
There’s a huge difference between British Indian cuisine and authentic Indian cuisine. Both taste wonderful if done well. But my journey has always been to learn the authentic way, what they call in India, desi cooking.
Desi means homemade, normally cooked by mum and prepared in a time-honoured fashion with great care and attention to detail. Every masala is freshly roasted and ground, every ingredient is mindfully prepared with respect and gratitude.
In restaurants, recipes are created with high turnover in mind. Base sauces are pre-made to thicken and flavour but quite often miss the mark and make every dish taste the same. And more often than not, sub-standard ingredients are used so restaurants hit their profit margins.
Chaat Man is different. We don’t work in a restaurant environment and so greater care is taken throughout all aspects of our food preparation. Only the very finest ingredients are used, such as locally reared high welfare lamb, mutton, goat and beef. Our chicken comes from local farms where they’re free to roam outdoors and have great space indoors unlike many battery farms. And vegetables are handpicked from local farm shops and independent retailers.
Every dish is made to an authentic Indian recipe. And enhanced with a freshly roasted and ground masala. Cooking is slow, nothing is rushed. Flavours are enhanced and deep, and customers return, wanting to further explore our exciting cuisine.
Chaat Man is about doing things right, respecting true Indian cuisine, and offering our customers a wide range of regional and speciality dishes. Yes, you will find time-honoured classics. But you’ll also discover many new and exciting dishes that may well become your new favourite dish.
