Let's talk bitters. These little bottles do so much more than gather dust on the back bar. What is an old fashioned without bitters? Why it's just sweetened whiskey. Each of these little bottles contains a highly concentrated flavour. They are generally added to a cocktail the same way you season food, and yes, that does mean more by a professional than you do at home.
They normally contain a bittering agent, and most of them were originally sold as medicines or tonics. A few drops go a long way and can take a drink to a new level. If you are getting some for home, then angostura bitters are the best starting point. They are the bitters most people have encountered even available in supermarkets. From there, it becomes more complex. My second choice would be an orange bitters. These don't exactly taste orange. Rather, they add a suggestion of orange to a drink. Then the world is your oyster. Cacao, celery, umami, all sorts of flavour profiles go forth and collect little bottles of strange flavours to improve your drinks.

Hello again, Arthur here for more behind the bar, and next on the agenda is the booze. I'm going to run you through a few of my faves in a few versatile categories. If you are starting out in cocktails, it can be a bit daunting knowing what to pick up.
We will go through a few bourbon options first. Without a doubt, a misunderstood drink. I love bourbon and its versatility.it can be bold and boozy (old fashioned, manhattan) but it can also work really well in a fruity drink (whiskey sour, or an fave a bourbon renewal) some of the best bourbons are easy to find Buffalo trace is my must get bottle. It's super accessible and the most versatile of the ones shown. Brilliant in a booze forward drink but also strong enough to stand up to lemon in a whiskey sour. I love four roses as well. I have used it a couple of times for the Rotters Club as an affordable decent bourbon. And finally, bulleit if you want something a little less subtle and a bit more on the nose. If you want to feel like a cowboy, bulleit is the one.
Gins a great spirit that no home bar should be without. There is so much variety in this category. I'm just going to talk about the London dry style. The type of Gin that you can mix with the easiest. Beefeater is a great no-nonsense London dry, always affordable, consistent, and available. It's great in any cocktail that calls for a gin. This would be my pick for must-have.
You can go a bit more interesting and get something a bit more flavoursome. In which case roku or botanist. Roku is subtle and a little more floral, great with tonic and in cocktails when you want fewer juniper notes. Botanist is a bit more robust and works well when you want a strong gin flavour in your drink. A couple of outliers I really rate bathtub gin. It is very junipery and heavy on flavour, so maybe not as versatile but interesting. And no. 3 is another usable in anything. Ginny enough in a martini but as at home in a bee's knees or gimlet.
That is enough waffle for this week. But keep your eyes peeled for more bar related nerdery

Hello, I am Arthur Bar Manager and founder of , and I will be getting us ready for this year's cocktail week with a series of behind the bar posts. I'll be sharing recipes and tricks of the trade. First things first equipment.
I like to use Boston shakers. The tins are lighter and less stress on the shoulders than glass and more controlled than the 3 piece cobbler.
But you can use whatever shaker you feel comfortable with. If you don't have a shaker, take a tip from and use a Mason jar.
I recommend getting a measuring jigger. The one in the picture is a japanese jigger in 50ml and 25ml measure. Again, find a measure that you are comfortable with, but precision is key to making good cocktails. Free pouring looks cool, but a really good cocktail is about balance.
Then we are looking at strainers. If you are using two part shakers like this or a Mason jar, get a hawthorn strainer. The spring helps you to fit it to most openings snuggly. This will stop the bust up and melted shaker ice from going in your glass. A fine mesh strainer is a must for drinks with fruit pulp in, but I recommend using one for most cocktails. It will stop you getting little shards of ice in your drinks and help keep the texture right.
Finally, a barspoon. This is vital to me personally. I love stirred cocktails more than I probably should and would not be without my barspoon. The long handle and twisted metal both looks cool and helps with control whilst stirring. I have a collection of mixing glasses, but I am a bit of a nerd. You don't need one. The cup of your shaker or a jar will do as good a job as you need.

Well we’re holding a competition! The only stipulation is that it needs to include an ingredient from Norfolk or a Norfolk brand 🍸

Cocktails will be judged on flavour, appearance and creativity- and will be judged by a group of cocktail experts, bar owners, food professionals and cocktail enthusiasts 😍

Judging commences at the start of NN Cocktail Week with the winning cocktail announced on the 25th October.

Deadline is October 1st 2024. Submit via a DM or drop us an email 😍
