Risotto’s always such a therapeutic dish to make…. Stirring gently while keeping the arborio on a simmer & constantly adding stock. Mine usually have plenty of greens in, and almost always a large squeeze of lemon juice 🍋 plus a couple of cheeses, this one using stringy, creamy buffalo mozzarella & parmesan. You’ve gotta hand it to the Italians 👏😚
