We are so pleased to announce that our Executive Chef, Orry Shand, has been named as a finalist for the Craft Guild of Chefs National Chef of the Year competition. Orry, who has previously won the Scottish Chef of the Year award, is not only a highly celebrated chef but also the current team manager of the Scottish Culinary Team, who recently took home two silver medals at this year's IKA Culinary Olympics in Stuttgart.

Orry joins 9 other finalists in London in October, where they will all be vying for the title of National Chef of the Year.

We are pleased to announce that the Entier Kitchen has retained its Eat Safe award again for a 2nd year following a routine inspection by local Environmental Health.

This award is attained by having the highest standards in food safety and hygiene, and provides an incentive for businesses within the hospitality sector to strive for food hygiene and safety management standards beyond those that are required by law.

We are only 1 of 3 establishments in the area to have this award and we are really proud of it. For our clients the Eat Safe Award provides a recognisable sign of excellence in the standard of our food hygiene, showing that our food is being prepared in the safest manner possible.

Our latest MLC training course is underway for the next 2 days, held in our bespoke training kitchen in Westhill. We are the only Marine Coastguard Agency (MCA) approved centre in the North of Scotland.

The MLC training course is designed for all chefs and cooks on board commercial sea-bound vessels and the certificate is legally required in accordance with the Marine Labour Convention (MLC 2006).

Aimed at all seafarers with proven experience in the industry with an appropriate food hygiene certificate but no formal cookery qualifications, the course will provide a formal qualification to work across sea-bound vessels internationally.

The Auchterhouse Shoot 2024

Entier are proud to support The Shoot 2024, a charity event that has been taking place for the last twenty one years.

On the 11th of August 400 guests will be welcomed to Auchterhouse CountrySports, for a day of shooting, socialising and fundraising. Since it's launch, The Shoot has raised and distributed over £4 million to charities across the country. This year The Shoot is raising funds for Maggie's Centres, JDRF Scotland and Seamab, a children's charity.

Supporting charity events such as The Shoot is extremely important to us. Here at Entier we are deeply committed to supporting our local communities and initiatives, we strive to make a positive social impact and support the lives of those around us.

Do you need to complete The Maritime & Coastguard Agency (MCA) Ship’s Cook Competency Course?

The MCA Ship’s Cook Competency Course is designed for all chefs and cooks on board commercial sea-bound vessels, and the certificate is legally required in accordance with the Marine Labour Convention (MLC 2006). Two of our exceptionally talented chefs from within our events division Wilde Thyme, Craig Palmer and Craig Coupar, hosted a cookery demo at the Royal Highland Show in Edinburgh this past weekend.

With both chefs being members of the Scottish Culinary Team, they talked about some of their experiences with the team, and shared insights following on from a recent trip to the Bakkafrost Scotland site situated on the Isle of Mull.

The chefs took centre stage at the Food For Thought Cookery Theatre, with their demo focusing on Native Hebridean Salmon. The audience were shown, and sampled, how to make a variety of canapes using cold smoked salmon, perfect for anyone to recreate at home.

A couple members of the Entier Family, Michael Hennessy and Ramsay Braid, are gearing up to participate in the Ride the North 100 mile cycle on the 24th of August raising funds for Friends of Anchor.

The pair took on the challenge last year, originally aiming for 64 miles, but they powered through and covered a whopping 80 miles in just under 8 hours! This year they have their sights set even higher and are going for the 100 mile route through the Angus countryside, featuring Arbroath, Letham, Forfar, Kirriemuir, Cortachy, Menmuir, Brechin, Bridge of Dun and Lunan.

The pair said:

“It’s a great opportunity for us to make a difference and support a wonderful cause. Last year, we were able to raise £1,440, thanks to the incredible support from family, friends and colleagues. This year, we have set our sights slightly higher and aim to surpass that amount by raising £2,000.

Any donation you can make will be greatly appreciated. Whether it's a big or small contribution, every little bit helps us get closer to our target."

We are incredibly honoured to have received an engraved chef's pan from Scottish Chefs. Presented to our CEO Peter Bruce by Robin Austin, President of Scottish Chefs, Kevin MacGillivray, Chief Executive of Scottish Chefs, and Orry Shand, Manager of the Scottish Culinary Team, this acknowledges our continued support of the Scottish Culinary Team, especially in the lead-up to, and around, the IKA Culinary Olympics held in Stuttgart.

The IKA Culinary Olympics is the world's largest and most diverse international culinary arts competition. The Scottish Culinary Team took home 2 silver medals at this years IKA Culinary Olympics. The first silver was in The Restaurant of Nations and the second silver was in the Chefs Table. Supporting and sponsoring the Scottish Culinary Team has been a source of immense pride for us at Entier, the hours of hard work, dedication and creativity shown by these talented chefs is truly inspiring and we are thrilled to be able to play a part in that.

Another week of Fresh Olive training complete. Led by our Executive Chef Orry Shand.

Our apprentice chefs were tasked with making a set lemon curd, with a tonka bean sable biscuit, topped with a strawberry compote and basil sorbet.

Orry guided the chefs throughout but it was up to them on how they presented their dish. Some amazing desserts were plated, well done all.

This finish line will be a very welcome sight for the Entier Bravehearts as they come to the end of the Aberdeen Kiltwalk later today! 🚶‍♂️

Today is the day we've all been waiting for and the Entier Bravehearts are ready to go! Thank you so much to everyone who has donated and supported us so far, it means so much to us and will make a huge difference to the lives of those affected by cancer in the North East of Scotland.

Each member of our team has a unique story, a personal connection that fuels their determination. We walk for loved ones, for survivors, and for those who have left a lasting impact on our lives.

Sending a massive congratulations to one of our sponsored golfers Sam Locke, who goes back to back with another win at the Portlethen Classic. After the three days he finished 14 under, making 4 eagles throughout the competition and clinching the win by a shot on the final hole with an eagle. This makes it two competition wins so far this year, massive well done Sam.
