We have a Grand Announcement to make.
In order to bring on these lovely events, in this our 10th year, I am bowing out of the kitchen and making way for Remi Ravaux.
Whilst classically trained, at cooking not the violin I should add he got his spurs at The Ivy in London, and has over his nearly 30 year career, perfected the flavours and techniques from around the world. He has always followed his dream and put his artistic flair and creativity into his food, from refined and elegant to rustic and charming.
I hope he will charm you too, as I will be left to charm you more with everything else.
In order to check Remi was going to keep up our fabulous food standards, I asked him some quick cheeky questions
CHRIS | How will your food measure up to mine? Are you any better, or should I keep my knives on stand-by?
REMI “My food will be a lot better than yours”
CHRIS– That's the right answer
CHRIS | How late should I let everyone know the food will be?
REMI “It won't be late, it will be bang on time.” Heady positioning here from Remi :-)
CHRIS | I understand you love Asian food, what set you in that direction, was there a first dish that drew you in?
REMI “The first time I worked with Asian food was for Will Ricker in London at the E&O restaurant and Eastern Oriental. That was the first time I'd ever experienced asian food and it was fantastic.”
CHRIS | Are you looking forward to the Korean night and what twists can you add?
REMI “This should be wonderful and we'll certainly be adding some twists”
CHRIS | So you're starting off with a french night with The Life Aquatic, what is your french provenance?
REMI “I have a French father. I was born in England but have been to France every year, as the family had a house there.”
CHRIS | We have Sole and Tart au citron paired with The Life Aquatic, will you be treading water with these dishes or doing the stroke freestyle?
REMI |“These will be classics and Tart au Citron is something I have been mastering for quite a few years, so hopefully it will come up to your standard” I'm sure it will surpass all expectations – can't wait.
CHRIS | Can you cook a decent ratatouille?
REMI | “No”
CHRIS | You're clearly teasing us there Remi, our new, no so little, chef with his film namesake, thank you.
