ingredients? We offer cooking lessons for everyone, regardless of age or experience! Our kitchen is in Bedford, but we will also come to your kitchen to show you how to cook. TAGAMO is a catering business managed by MM Japan. Our kitchen has been authorised and rated with a food hygiene rating of 5 by the Food Standards Agency, Bedford Borough Council.

Hi Everyone,

I love baking bread.

Can you see some round bread rolls? They are called Melonpan in Japan. It is a roll covered with a thin biscuit.

I sold Melonpan the other weekend at a charity bazaar and they went very quickly!

This time, I made biscuits with matcha, coffee, burnt butter and cacao nibs.

It has been a while since my last post. My Japanese teaching job keeps me very busy but I have been cooking and baking for my loyal clients, family and friends.

The good news is that I am planning to run my shaved ice stall at local festivals this Summer because I am not going home to Japan. I am excited to go out and serve my food directly to you again!

I will tell you about Okayu today.
It is Japanese rice porridge. It is made with rice and a lot of water, 1 part rice and 10 parts water. Cook for 30 to 40 minutes. 10 minutes only with a pressure cooker!

We eat Okayu when we are poorly as it is easy to digest and it is a good source of carbohydrates.
It was also a war time food. It could save rice and make more food out of less rice.

Okayu is soothing. Take a spoon full of white soupy rice and blow to cool it down...Okayu and grated apple were what my mother made for me when I was poorly.

My mum always makes traditional Japanese delicacies at home. When she makes, they are, usually, much nicer and fresher than shop-bought products.
Today, she was preparing for Ume (plums) to 'sunbath'. The hot sun kills bacteria and turns the fruits brighter.
The finished product is called Umeboshi. It is extremely salty and sour, so much so that it makes your mouth water, literally.

When we arrived at Haneda Airport, there was a photo of lemon and Umeboshi up on the wall in our saliva PCR test booth to help stimulate the flow of saliva!

This week's menu is ramen, gyoza and matcha brownie on Thursday 25, Friday 26 and Saturday 27 March.
(Yes, available Saturdays also during Easter break.)
Your ramen will come with a small pot of homemade soup paste. At home, in the takeaway box or your large noodle bowl, add the sauce paste and hot water to serve.
