Let’s talk…

… about the post Wedding Blues

As both a caterer and couple who have also recently tied the knot ourselves, we know first hand from each sides the magic that enfolds during each and every wedding day. But what is not talked about often is the days and weeks after - the quiet moments when the celebration fades. Often referred to as post Wedding Blues and my gosh it’s rough!

Don’t get me wrong I am in my element eating all the Fried Chicken in the world without considering upcoming dress fittings and a silent relief not to have look at table plans again (not my own any way) but it does feel a little quiet up in here without all the fun and shine wedding planning brings. Grateful we are mid season and we can still embrace the joy doing what we love most with our wonderful team side by side.

If you are in the same boat this is your sign of reassurance you are not alone! It’s normal and it passes - left with incredible memories with our favourite people.

Bubbles with a view paired Portland Pearl Oyster & a variety of canapés is how we kicked off celebrations for Rina and Gars big weekend at ✨

Followed by a 3 course delicious feast featuring Devon Ruby Red Fillet Steak Tartar, Dorset Crab, Halibut, Short Red and an array of colourful Desserts. As local produced meets Asian fusion… layers upon layers of flavour, interesting combinations and pretty plates!

The day had it all last minute casino addition, talented entertainment, sparklers, surprise Bridesmaid choreographed dancing, many beautiful outfit changes, soju toasts and more. It truly was a pleasure catering alongside this talented team with Rina and Gars at the heart. A day we won’t ever forget!

Congratulations Rina and Gars 🫶🏻Thank you for your trust, love and passion… it’s been a blast!

Reminiscing back to these beautiful souls big weekend… Theo and Kate left no detail untouched! From honey featured within our dessert gifted from their engagement night (the very exact jar!) which we infused with truffled whilst sharing the story with guests as we served. Handwritten thank you notes to each guests. THAT second dress. Follow up de-brief breakfast the next morning. Homemade jam’s Kate lovingly made as a farewell gift. So many many more!

These guys truly prioritised putting their stamp on the wedding and the guest experience at the heart of it all with the proof in the pudding (puns always intended) the vibe all weekend long was sky high! Kate and Theo’s mindset of fun, experience and staying true to themselves inspired a lot of our own wedding planning.

Behind the scenes highlights that will always make us smile Kate and Theo’s Bao Bun kitchen late night party. So much fun! As well as Kates face light up when we shared with them we upgraded the menu to our Extra Mile offering. These guys are such foodies we just couldn’t help ourselves knowing how much they loved it in the taster!

Spring is trying its hardest to do its thing. Lighter evenings and sunshine on the horizon 🤞hitting the year running with lots happening behind the scenes at Fossil. Here is our quarter round up of what is shaping up to be an incredible year!

〰️ lots of tasters and planning for our amazing ‘24 season has been happening! Fossil hosts tasters one to one and for every upcoming wedding we have created a bespoke menu using high quality local produce that celebrates each couples unique stories. From dessert boards featuring each colour of couples engagement ring as well as a nod to the proposal to this weekends menu a British Spring/Indonesian fusion feast couples favourite foodie destination on their bucket list adventures and so much more. We have loved so much growing closer to our couples and creating menus with details that showcase stories all their guests know and love!

〰️ Steve and Kirsty got married! It was only a teeny registry office moment to tick off the legal element before our official wedding in France but what a special day it turned out to be. We couldn’t be more grateful to our faves for enhancing our celebrations. & for making our very own dream come true Orangery moment at our favourite venue. for capturing every memory. & for keeping us hydrated and well fed. Roll on part 2 later this year!

〰️ opening Lyme Regis’s first ever Fried Chicken takeaway… has hatched! Such an incredible reaction to our new business which has been a lot of fun getting off the ground from scratch. Our chicken always gets lots of love at weddings from canapés to evening food so naturally we felt compelled to roll it out to our lovely hometown. Weddings will always be our first love however it brings us a lot of joy as well to have a space we can call home of our own.

What a start only set to get better! Our first wedding of the season this weekend and we cannot wait to fuel celebrations for a lovely couple and all of their bestest friends and family! Grateful to be surrounded by so much love, support with the best team, couples and fellow suppliers🫶🏻

Alongside prepping for wedding season number 7 and planning our own wedding we have also been working behind the scenes on a new venture… Lyme Regis’s first (and only) Fried Chicken Takeaway shop set to open next week 🥚

Inspired by everyone’s fave canapé and crowd pleasing dance floor fuel we felt no better fit than our Fossil Fried Chicken when we set out to bring something delicious to our home town.

Annnnnd we are back after a beautiful blur of a week following part 1 getting married. Thank you so much for everyone who have reached out to send love and ‘grats - means the world 🫶🏻 cannot wait to share more with you all when we receive our snaps back from the talented & all round angel face .

In the meantime blue skies are finally here and Spring feels within touching distance! Less than one month now until our season begins and we are looking forward to doing what we love most.

Always a highlight of any wedding is the canapé & drinks reception… picture the scene you’ve just married your best friend, all your favourite people surround you and you begin tucking into bitesized delicious-ness in one hand washed down with something sparkling in the other. Bliss!

Here at Fossil we love to elevate our canapé menu for each new season - exploring flavour combinations and creative presentation. Ideas are inspired by local produce, our travels or sometimes as simple as something that sparks curiosity on a dog adventure with Norman. We welcome bespoke ideas too - these are always a celebration of the couples story.

We are getting married on Friday… 😱

A quick morning out to the registry office to sign papers before the big day ahead of June with all our faves however excited all the same to make things official!

We will be taking a long weekend break away to celebrate so if you need anything from us in the meantime please do reach out! With less than 5 months to go until our own big day things are getting a little real over at Chateau De Fossil. Thought it would be fun to reflect on what I’ve learnt so far from being on the other side of the table as a 2024 upcoming Bride. Here’s my top 5!

✨ Planning
Despite everything we know about our beloved industry we still have received huge benefits from having a wedding planner onboard. That peace of mind knowing someone has your back taking care of the details is worth its weight in gold & I believe is why I have felt so chilled (mostly). Amy @ has been an angel to us - highly recommended if you are getting married in France. Or in Dorset and surroundings 100% Melanie & Danielle @ are our go to faves!

✨Making milestones
Bridesmaid dresses, THE dress shopping, suits, wine tasting - any excuse you can make to get together your Bridal party and turn it into a celebration has been so much fun! Enjoying the journey to the wedding making milestones out of the planning with all our favourite people is something I’d highly recommend.

✨ My vision changed a lot
If you asked me when we first got engaged what my dream wedding would be like vs how things are shaping up things are completely different. The looks, vibe and colour scheme has taken many turns in the last year or so. It’s okay for things to evolve and change of direction. When I let things grow organically trusting the process the best ideas have arose. Grateful for best pal Sal for always having my back from candle to linen colours 🫶🏻

✨Unease about getting ready
Speaking with others recently I realise I am not the only one who has felt nerves around getting ready or how I will look on the day. Maybe the pressures of social media in the world we live in? I’m not sure? But it’s something that has made me quite nervous! 2023 Fossil Bride has created an amazing & positive experience for fellow Brides designed to help them on their fitness journey in the lead up to the big day. Lucy is lovely and highly experienced in the fitness industry - def check out her new Bridal project!

Sharing board feasts are a personal Fossil favourite. It makes us so happy to hear how much you guys love them too! Often we are asked how best to cater for dietary requirements when couples opt for sharing. Here’s how we personally like to ensure all guests are fully immersed in your Wedding Breakfast…

Firstly, we work closely with our couples to create the main sharing feast foundations. Including everything they love whilst avoiding everything they do not! Our menus include tales of their time together, always a nod towards adventures shared as well as memorable meals. Inspiration always centres around our couples and seasonality! We have an in-depth thought provoking process that nails the brief time and time and again (IYKYK)

Once the main board is locked in and trialed we ask for couples final dietary data 6 weeks to 1 month before the big day. It is important when collecting this info from your guests to ask them to include as much info as possible on severities when it comes to an allergens in particular.

Once we know this we create a second menu which replaces the elements guests cannot eat and serve plated directly to them which compliments side dishes for everyone to feel inclusive and a part of the sharing experience.

Some elements within a menu may even be able to have the odd tweak without jeopardising taste or quality such as using a gluten free flour within a garnish.

On the day within Team Fossil we always dedicate a trusted member of the team who will solely look after dietaries front of house working closely with the back. Shout out to Freya & James dietary legends! They will be on hand to answer any questions one to one making sure everyone has the most enjoyable experience and eats seamlessly alongside the sharing feasters.

Catering trends we hope are here to stay ✨ Always a huge advocate of your wedding, your way! Here find a few inspiration pieces we love coming up for ‘24 season that we hope you love as well for your planning - some ft in our veryown upcoming wedding too!

✨ Story Telling - menus that celebrate you both, your favourite memories together, date nights, adventures, favourite chefs, avoiding dislikes. If you both adore it - it doesn’t matter what Uncle Bob thinks!

✨ Edible Favors - or no favors at all! You’d be gutted to hear how many unused favors we gather into stations at the end of the meal. Opt for something interactive or that guests can consume. Father Fossil (Kirsty’s Dad) is making ours and they will also replace our toast drink - the colour ofc matches are florists colour scheme too! Attention to detail 🫶🏻

✨ Interaction/Theatre - whether it be quirky canape boxes, sharing side dishes alongside your pretty plated dish, showstopper joints of meat carved @ at the table. Throw in the odd surprise element if you are looking to break the mold and avoid traditional vibes

✨ Focus On Flavour & Produce - Our ethos here and here to stay for 2024 & beyond is layers of flavours, textures, colours inspired by seasonal & local produce. Using good quality fondations in produce allows for creative memorable plates prepared skilfully by our talented chefs. Grateful be positioned on the Dorset/Devon boarder with an abundance of local high quality suppliers.

✨ Miscellaneous Post Dinner Time - if you have the time in your itinerary schedule in an hour of ‘nothing’. We are doing this personally at our wedding to enjoy everyone’s company, sneak off for some photos, give guests a moment to freshen up post meal to dance the night away. Fill the time with a signature cocktail perhaps - ask us about our new Espresso Martini bolt on to inject some caffeine pre dancing - or even tea/coffee on the lawn is complimentary with every Wedding Breakfast

Looking back to Charlie & Emily’s beautiful wedding via the talented snaps ✨ Feedback like the below means the world to us!

The Dream Team - Kirsty and Steve are the dream team when it comes to Wedding Caterers. Looking for a bespoke menu built around your experiences as a couple? That’s what we received. An incredible, deconstructed beef wellington; a beautiful chocolate mousse (the dessert we had at our engagement dinner); and a mouthwatering selection of canapés, not to mention Steve’s ‘Secret Recipe’ Buttermilk Chicken Tenders which we had for our evening food!

My husband and I cannot recommend them highly enough. We found Kirsty and Steve via their instagram page and were hooked by the content they were posting. Kirsty was so diligent in her research and wanted to find out what made us tick as a couple, which would then influence the menu they designed for us. We were a little nervous as they were slightly off patch for us, but all our worries vanished when we had our tasting. The food was cooked to perfection, the meat was tender, and the chocolate mousse was so light and fluffy while still packing a chocolatey punch. We loved our menu and Steve’s cooking. It was so good, we didn’t need to make any revisions and approved it at the first tasting.

We didn’t think it could get much better. That was until our wedding day. We had a marquee wedding, and I cannot understate the role that Kirsty played in helping us set up, running the day, and generally providing emotional support when it was needed! We had a total of 160 guests and fully appreciate Fossil’s efforts in catering for this many people. Their service was run professionally and smoothly, and we have since received many compliments from our guests about how delicious the food was.

If you are looking for a unique, bespoke experience at your wedding to blow your guests away then Kirsty, Steve and the team at Fossil Foods are the people you need to go to. In the meantime, we’ll certainly be visiting their winter time take-away ‘Fossil on the Road’!“

2023 Summer season you’ve been everything and more! Ending on a high for our catering besties wedding followed by a Lebanese inspired menu for another gorgeous couples best day.

Beaming with pride with what team Fossil have achieved this season… nailing it week after week fuelled by the drive to enhance wedding magic and serve memorable plates. From back of house to the front take a bow! You guys mean the world to us… thank you, thank you, thank you.

To our couples who have trusted us with their visions and allowed us to do what we love each week. Sharing these magical days with you & your favourite people is a huge privilege - the buzz of seeing your smiles and beautiful feedback is one that we will never take for granted! September has been the gift that just keeps on giving! Many of beautiful weddings having had the pleasure of catering with gorgeous couples entrusting us to tell their story at the most stunning locations Devon & Dorset have to offer.

On the pass has been an array of bespoke menus from pretty plated Day Boat Monkfish dishes, Carve @ the table Tomahawks, Sharing Cow Boy Steaks, fresh & seasonal goodness from our neighbours at and our HQ garden. September is always a treat with so much seasonal produce on offer right on our doorstep.

Ending this month on a high with an amazing couple at this weekend. Can’t wait!

Back at it tomorrow after two weekends away from the kitchen and we are very excited!

Here’s a snap taken by the talented Jules from taken at the last wedding we had the pleasure of catering with Kate, Theo and their good vibe tribe.

A fun backstory from the canapé featured here is these Confit Duck Leg Croquettes featured originally part of the main course trialed at K&Ts taster. It was a toss up between two dishes to make the final cut for their big day with many of too and throw.

A delightful Devon Ruby Red Fillet dish pipped the post (just!) but a las the couples fave croquettes so more-ish sooo we proposed why not have it all! After all it is your ‘best day ever’.

Here they are featuring as a delightful canapé with a little pop pipped with Bloody Mary Ketcup topped with Edible Flowers hand delivered by Kirsty directly to the bridal party mid-photoshoot fuel in the beautiful garden. Roaring success all round!

Energetic, vibrancy and joyous are some of the many adjectives I would use to describe Dina and Stuart’s mega wedding day ✨

These two truly know how to throw a party from drummers & dancing, tambourines to margaritas but the thing that stood out most of all was the contagious smiles D&S wore all day long. It felt very special to play a part in their celebrations!

Serving 200 guests multi options 3 courses in record pace with lots of glowing reports on both service & food we couldn’t be more buzzed!

Very proud of our team front & back of house pushed HARD! Smashing job crew 👏

Such a smashing day filled with so much love! An absolute delight to get cater Miri, Chloe and all their faves.

There’s always room for dessert… here we have large sharing Raspberry Ripple Cheesecake, Biscoff Base, Honeycomb, Macarons & Edible Flowers. A bespoke hybrid including all of the girl’s favourite sweet flavours - a match made in heaven & so pleased to hear the feedback received agreed 🫶🏻

High energy vibes, contagious laughter, colourful in style but also how the day felt for Jasmine & Stephen’s big day at ✨

Canapés and drinks reception hosted in the on-site chapel followed by 2 course sharing main course & dessert for just under 120 of their faves.

Ending the feasting with a local cheese grazing table including hand picked choices from the couple to graze on all night long ft here in this snap.

From date nights inspired ‘Surf & Turf’ rehearsal dinner to bringing a flare of Provence to Dorset - it was an absolute pleasure to create!

Served alongside many smiles and gorgeous feedback we couldn’t have been more happy to be the fuel of K&Gs celebration. Congrats loves 🫶🏻

Wowwwee Steve and I are both beyond grateful for the many new enquiries & bookings coming our way for next season! 🫶🏻

Alongside many of our wedding industry peers we are purposefully limit our capacity each season… not the mention a few weekends are blocked off for our personal wedding (eeek!). With all this in mind things are looking rather busy with remaining availability in peak season limited.

Delicious food backed by memorable service ✨

If you’ve ever attended a Fossil catered wedding the chances are you’ve had the pleasure of meeting these 3 lovely ladies - Freya, Millie & Emily. We love them so much they will be running plates at our own wedding!

What an incredible day for Emily & Charlie and 165 of their favourite people! We LOVED every moment. From canapés right through to the evening dance floor fuel.

This menu was particularly special as it was created inspired by E&C Paris engagement with a twist ‘The Deconstructed Welly’.

Devon Ruby Red Fillet, Cep Glazed Pastry Base, Chantenay Carrot, Wild Mushroom Duxelle Puree, Parma Ham Crumb, Crispy Cavolo Nero and Port & Porcini Jus.

Sharing Side Bowls of Herb Parmentier Potatoes with plenty of top ups flowing.

These two have been such an incredible couple to work alongside - always bringing the fun, the detail and the good times. It’s been a dream from day one and now we are
