📝 INGREDIENTS
* 3–4 large chicken breast
* 2 tablespoons olive oil
* 1 lb whole cherry tomatoes (2 cups)
* 1 8 oz container Kite Hill Cream Cheese
* 4 garlic cloves
* Salt/pepper to taste
* 1/3 cup chopped onions
* 6–7 leaves fresh basil, chopped
🧑🍳 INSTRUCTIONS
1. Preheat oven to 400F.
2. In a large baking dish add the chicken breast in a single line down the middle of the baking dish. Pour the tomatoes, onions, garlic, and salt/pepper over the chicken. Drizzle the olive oil over the top of all of the ingredients.
3. Scoop out the cream cheese and place it in the middle of the baking dish, atop the chicken and other ingredients.
4. Bake in the oven for 30 minutes or until the chicken is cooked through (165˚F internal temp).
5. After the chicken is cooked to temperature, remove the dish from the oven. Using tongs, shred the chicken and garlic cloves. Once shredded, use a spoon and mix everything together.
6. Serve hot over zoodles and if desired, garnish with fresh basil.

✨Tips for Perfect Yogurt Bark✨
I don’t recommend using low fat or fat free yogurt. (It doesn’t taste creamy once it’s frozen.)
Thinly slice the strawberries so they’re still easy to eat when frozen.
Let the yogurt bark soften for a minute or two before enjoying!

Here’s what you’ll need
1 cup whole milk Greek yogurt
2-3 teaspoons honey (or to taste)
1/2 cup berries (I used sliced strawberries and blueberries)
2 tablespoons of sliced almonds or granola
Spread the Greek yogurt into a thin even layer on parchment paper or a silicone baking sheet. Try to spread it evenly.
Top with fresh berries. (Be sure to thinly slice the strawberries!)
Sprinkle with nuts or granola.
Freeze for 3-4 hours or until firm. Break into pieces and store in a freezer bag!

- Combine 1/2 cup of chopped strawberries and 1/4 cup of whole raspberries with 2 tablespoons of honey
- With a heart-shaped cookie cutter, cut the Brie
- Fill with berries and bake in a small dish for 15 minutes at 350F
- Top with fresh basil, pomegranate seeds and toasted walnuts
- Serve with crackers or bread!
