It was a great pleasure to cater lunch ‘wholesome bowl’ Ayurveda Red Lentil Dhal, Mumbai Muffin, Indian Slaw with Root Turmeric Yogurt Dressing followed by Chocolate Torte for the Om Chanting event hosted by that took place at Sage Yoga Studio in Belper on 9th November.

Our Indian feast today is Aubergine and potato, spiced broccoli, carrot salad, lentil curry, rice, flatbreads, Mumbai muffin, mango lassi and coconut dressing. Absolutely delicious 😋 We also have quiche, pies, pasty, sausage rolls, mushrooms burgers and a sweet treat is blueberry and apple crumble slice. Who Am I?

Hello, I’m Parul Weston, I started The Vegan Spice Co in March 2019. All my food is Vegan, Gluten Free and made from scratch. I source as much organic and local ingredients as possible.

Born in Islington London. Raised by a very traditional Indian mum who cooked the most amazing homemade vegetarian food.

My siblings and I were very lucky that our mum involved us with everything she made; curries, various rotis, rices, poppadoms, pickles, street food and the best Indian desserts.

I have always loved hosting dinner parties and charity events. My friends and guests complimented and suggested setting up my own business so here I am today, adding a little twist to my mums recipes and creating my own modern dishes.
