Not a classic image of healthy eating!

However, I do feel that to be healthy is MUCH more than just quinoa salads and kale (much as I love those too!).

It’s important to have a balance and to sometimes enjoy and savour foods you love just for the pure joy of it. This is for a dinner party this evening...

Nourishing November 🍁 salad

Quinoa, roasted butternut & edamame bacon salad with herbs, radishes and an olive oil & mustard dressing

A perfectly balanced meal (I usually have this with some fried halloumi or salmon/mackerel fillet to make it more filling):
🍁 Packed with plant protein from the quinoa and edamame beans
🍁 full of vital vitamins and powerful anti-inflammatory compounds from the butternut, edamame, mixed peppers, herbs and radishes
🍁 Good quality fats from the extra virgin olive oil

Without the dressing this salad will keep in the fridge for 2-3 days - perfect lunch served with avocado, houmous or a protein source such as cooked chicken or salmon. Will give you lots of energy to tackle whatever the afternoon has in store for you!

Need healthy bakes for Half Term?

These are delicious 😋 Carrot 🥕 & Banana Muffins inspired by lovely recipe.

🥕Despite being very low in sugar they are so delicious and will definitely satisfy any sweet tooth.

🥕 They are sweetened with bananas, cinnamon and only 3 tbsp of maple syrup for 12 muffins. They are packed with mineral rich seeds, vitamin rich carrots and wholemeal spelt flour.

Some delicious 🤤 and nourishing canapés for an engagement party 🎉 in London - not a sausage roll in sight!!

🎈 Crostini with creamy goats cheese & balsamic marinaded figs
🎈 Cucumber slices with tuna tartare, avocado 🥑 and a sesame oil dressing

Beautiful autumn 🍂 produce from a friend's lovely garden in Dorset - seasonal produce is the best - seasonal, organic and delicious.

I can't wait to get cooking with these but trying to think up some nourishing recipes aside from stewing... any ideas most welcome, and will keep you posted... thinking healthy breakfast muffins or a jam with berries?

Rainy ☔️ Sunday baking...
I love making classic teatime treats a little healthier while still keeping the tastiness and feeling of indulgence.
These delicious chocolatey bites are made with real ingredients (no UPFs), packed with mineral rich nuts and seeds and a lovely hint of salt & chilli 🌶️😋 - give them a go ⬇️

Pistachio, mixed seed & chilli chocolate tiffin

100g Pistachios, roughly chopped
75g mixed seeds
2 tbsp sesame seeds
1 tsp chilli flakes (optional)
400g really good quality 70%+ chocolate
2 tbsp coconut oil or butter
75g dried apricots, chopped
Large pinch of quality sea salt

Preheat the oven to 200C. Place the nuts and seeds on a baking tray and cook for about 4-5 minutes until slightly toasted. Stir in the chilli.
Break the chocolate into pieces and place in a heatproof bowl with the coconut oil or butter. Set over a pan of barely simmering water and leave to melt.
Line a baking tray (about 15cm x 23cm) with baking parchment.
Reserve 1 tbsp of the nut mixture, then stir the rest into the melted chocolate along with the apricots. Tip into the prepared tray, sprinkle with the reserved nut mixture and salt and leave to set for at least 3 hours.
Cut into chunks to serve and enjoy!

This was from a lunch party at the weekend... menu as follows:

Canapés:
🍅 Baby mozzarella, roasted tomato, basil & olive skewers
🫛 Pea blinis with smoked salmon pâté
🧀 Parmesan shortbreads with walnut pesto & goats cheese

Main course:
🍣 Moroccan spiced salmon fillets with herbed yoghurt dressing
🍋 Lemon and honey roasted chicken salad
🥬 Roasted cauliflower, chickpea and kale salad with tahini dressing
🌿 Peas, broad bean, griddled courgette, mint and feta salad
🫑 Harissa spiced roasted vegetables and couscous salad

Pudding:
🍓 Lots of colourful meringues and berries

A super easy protein rich lunch - mushroom, 🍄‍🟫 kale 🥬 & feta frittata (great as leftovers for tomorrow too)

Protein is a vital macronutrient that keeps blood sugars stable - this is because the complex nature of protein means it is slow to digest so keeps you fuller for longer and provides a slow releasing source of energy.

Protein has many other functions:

🥚 Vital for hormone production
🥚 Provide building blocks for neurotransmitters so important for brain 🧠 health
🥚 Creates enzymes so supports digestion
🥚 increases muscle mass and strength so great for weight loss and energy

Making a big batch of granola for my daughter to take back to Uni. 😋

Packed with protein-rich nuts and seeds, fibre fuelled oats and some popped quinoa from which gives it some extra crunch.

It's great as a speedy high protein breakfast with yoghurt & berries or as a snack at anytime!

A balanced breakfast that is high in protein can set you up for the day as it regulates blood sugar levels, keeps energy stable and sharpens focus for the day... ideal for uni life!
