Run Down, also referred to as rundown, run dung, fling-me-far, is an incredible flavorful fish stew dish cooked in coconut milk. Popular to Jamaica and Tobago cuisine, this dish is eaten in several Latin American countries as Rondón.

This dish was exported to Latin America by the Afro-Jamaican immigrant workers who migrated in the early 19th century to build projects such as the Panama Canal and the Costa Rican railroads which It is now consumed by small minorities on the island of Tobago as well as areas of South and Central America that have Jamaican expats.

Caribbean food has a distinct flavor and rich history from the people who came to the islands. The Arawak, Carib, and Taino Indians were the first inhabitants of the Caribbean islands. They occupied the present day islands of British Virgin Islands, Jamaica. Cuba, Dominica, Grenada, Haiti, and Trinidad .

Their daily diet consisted of mainly vegetables and fruits such as papaw, yams, guavas, and cassava.

The Africans introduced okra, callaloo, fish cakes, saltfish, ackee, pudding and mangos, and the list goes on.

We had a client recently who is allergic to Cabbage 🥦...so I did some investigation. 🤔

Allergic reactions to cabbage are rare, although possible. Cruciferous vegetables are also known by their plant family name Brassicaceae. If one is allergic to cabbage, they may also be allergic to other members of the Brassicaceae family such as broccoli, brussels sprouts, and cabbage.

How do you know when to use ground pepper vs cracked black pepper❓️

Finely ground black pepper like dust is best used for things like sauces. It's pretty strong, and a little goes a long way. Coarse ground pepper, on the other hand, is best for finishing dishes at the table or seasoning proteins. It adds a burst of flavour to anything you add it to.

The fruit known as apple 🍎 in Jamaica.

It came to us from the Pacific Islands and thrived in Jamaica. This apple is mainly eaten raw and ranges from bland to tangy to very sweet. The skin bruises easily and is red-crimson-burgundy. The fruits darkest in colour tend to be sweetest.

A Jamaican Christmas is not the same without a true Jamaican sorrel drink.

When I was growing up in the Caribbean, my favourite part of the holidays was the sorrel drink and some rum cake. The sorrel flower is in season during the Christmas period in Jamaica, which is one of the reasons why sorrel drink is traditionally made at Christmas.

Each Christmas season, people across the Caribbean raise a ruby-red glass of sorrel in celebration of the holidays. While sorrel is commonly associated with Jamaica it is a popular beverage during the Christmas season in other Caribbean countries too, including St. Vincent and the Grenadines, Trinidad and Tobago, Guyana, Antigua, Barbados, Belize, St. Lucia, Dominica, Grenada and St. Kitts and Nevis.

Introduced from West Africa to Jamaica in the 17th century. Thanks to tropical climates comparable to West Africa’s, Latin America, the Caribbean, and the American South became a new home for "sorrel." It’s known as agua de Jamaica, jugo de Jamaica, or rosa de Jamaica in much of Latin America; bissap in Senegal; sobolo in Ghana; and zobo.

“Sorrel” is a Caribbean name for hibiscus flowers, also called jamaica in Spanish. Sorrel is dark red, a little sour, with a raspberry-like flavor; made from the petals of sorrel plant (flor de Jamaica)” or hibiscus plant flower.
It can be enjoyed hot or cold. Sorrel is brewed with aromatic spices like, cloves, ginger, cinnamon, allspice (also known as pimento), star anise, bay leaves, nutmeg, vanilla, or mint. It is often flavoured with rum or other alcohol especially for C the holidays.

The dried variations are more accessible nowadays from shops that stock Caribbean and African foods.

We now have recipe cards to accompany our curry powder, Tita Curry Powder is blended using a unique mixture of high-quality spices, roasted to create a gentle, earthy flavour with no added salt or preservatives.

The use of Tumeric gives our curry powder the rich yellow colour, whilst the fenugreek adds a distinct flavour. It's also vegan friendly.

SPICY JERK

DEES imports official distributors of walkers wood jerk seasonings 🌶

INGREDIENTS
• 900g b***d leg of lamb, cut into 2cm pieces
• 1 Tbs Walkerswood HOT or MILD Jerk Seasoning
• 1 Tbs vegetable oil

METHOD
Add the jerk seasoning and vegetable oil to the lamb and mix well,
cover and place in the fridge to marinate for as long as possible.
When ready to cook, soak wooden skewers in water
for at least 15 minutes to prevent them from burning on the grill.
Thread 3 to 4 pieces of lamb onto each skewer, allowing space
between each for better char. Cook on medium - high heat on your
barbeque for 10-15 minutes, turning often
often until cooked to
preferred internal temperature.
