TURMERIC RICE RECIPE (Yellow Rice / Geelrys)
Let’s make Turmeric Rice – or Yellow Rice, as it’s known in South Africa 🇿🇦 It has its origins in South Africa’s Cape Malay community 💛
I’m often asked for my Turmeric Rice recipe so here it is! Stay tuned – I’ll be making it even easier for you to prepare this yummy side dish.
👉 TURMERIC RICE (Yellow Rice)
Serves 4
½ tsp oil
1 finely chopped onion
1 cinnamon stick
1 bay leaf
250ml basmati rice
1 tsp turmeric
500ml boiling water
1 finely chopped onion
Warm a saucepan over medium heat.
Add oil and swirl around the saucepan and warm to a medium heat.
Now is the time to add the chopped onions, cinnamon stick and bay leaf. Let them cook for a few minutes until the onion is translucent.
Add the rice and turmeric and stir (no need to rinse the rice).
Turn over the rice grains so that they are coated and glistening.
Add the boiling water.
Stir ONCE and cover with the lid.
Turn down to the lowest setting and let the rice cook for 15 minutes (time this!).
Don’t remove the lid or stir the rice whilst it is cooking as this will break the rice and the starch will escape and make it sticky!
Remove the lid and take the saucepan off the heat.
Cover with a tea towel for 5 minutes (there may still be water in the saucepan… leave it as it is).
Loosen rice gently with a fork.
Serve!
