Chorizo Brunch Hash w/ Chipotle Yoghurt
Ingredient:
* 4 small Potatoes, diced.
* 2 Red Onion, diced.
* 2 Red Peppers, diced.
* 1 Avocado, sliced (Garnish).
* 2 Spring Onion, chopped (Garnish).
* 3 Eggs.
* 100g; Bacon, Chorizo, diced into small pieces (optional, can be swapped with other vegetables such as Aubergine, Courgette, Tomatoes etc...).
* 1/2 TBSP; Paprika, Turmeric, Garlic, Onion Powder (optional).
* Salt and Pepper to Taste
* Oil for pan
For Yoghurt Dip:
* 2 TBSP Greek/Plain Yoghurt
* 1 TBSP Lemon Juice
* 1/2 TSP Chipotle powder (or a mix or cayenne and paprika)
* 1/2 TSP Garlic Powder
* 1/2 TSP Paprika
1. Preheat oven to 160 degrees (not necessary if using frying pan with lid).
2. Prepare all of the vegetables. When potatoes are diced, allow to sit in water for 5/10 minutes to release starch, drain and dry before seasoning.
3. In either an oven safe pan or frying pan with lid, fry meat on a med heat with a splash of oil. Remove from pan once crisped.
4. Add seasoned potatoes to the pan and allow to cook out for 5-8 minutes depending on softness (check by poking with a knife).
5. Whilst potatoes cook, prepare the yoghurt dip but mixing all of the ingredients in a bowl.
6. Add in the remainder of the vegetables to the pan with any leftover seasoning from potatoes. Cook for a further 3 minutes before removing from heat and cracking in eggs.
7. Place pan in the oven for 3-5 minutes, depending on egg yolk preferences. If using a lid place on top at this point. During this time, prepare garnish.
8. Remove from oven, dress with avo, yoghurt and spring onions. Season with S+P and Cayenne if you like.
9. Serve immediately!

Banana Bread
Ingredients:
* 140g Unsalted Butter, Room temp (I used half oil, half butter as I had ran out)
* 140g Caster Sugar
* 2 very ripe Bananas
* 2 Eggs
* 140g Self Raising Flour (I used Plain with 1 extra tsp of Baking Powder)
* 1 tsp Baking Powder
* Pinch of Salt
* 200g Dark Chocolate (optional)
1. Preheat oven to 180 Degrees and line a 2lb loaf tin with parchment paper or butter and flour.
2. With a fork, mash bananas to a paste.
3. Chop chocolate into small chunks.
4. In a large bowl, cream together butter and sugar until light and creamy.
5. Add in eggs one at a time and beat.
6. Mix in mashed banana.
7. Sift in flour, baking powder, add salt and fold mixture.
8. Add in Choc chips and more banana if you wish, decant into cake tin.
9. Bake for 45 minutes or until a skewer comes out clean. Allow to cool in tin for 10 minutes before removing and cooling completely.

- 500g Mince Beef
-400g Chopped Tomatoes
-1 tin Kidney Beans
-1/2 tsp Tomato Purée
-125ml Red Wine or Stock
-1/2 Large Onion
-2 Carrots
-1 Bell Pepper
-2 Celery Stalks
-3 Cloves Garlic
-2/3 Chillis (mixed)
- Handful of Mushrooms
-Spring Onion (optional Garnish)
-Coriander (optional Garnish)
- Sour Cream (to Garnish)
- Cheddar
-1 tbsp Paprika
-1/2 tbsp Cumin
-1/2 tbsp Cayenne (chilli powder is fine)
-1/2 tbsp Oregano (any dried herb)
-Pinch of Cinnamon (optional)
- Salt + Pepper to taste
-Olive Oil
-Butter (for Potatoes, Optional).

from the local supermarket, with out essentials such as Oil & S&P, costing just £3.78 per person.
