As we look to the future of the Wilderness Centre as a community business, serving the Forest of Dean and Gloucestershire, we're holding open afternoons (Sundays 2.00-4.00) to tell potential shareholders what our plans are and to get their thoughts. The dates are 21 April, 12 May and 2 June 2024. Let us know if you'd like to attend.

If you are wondering what a seasonal menu from Infamous catering looks like.
This one was from a hen do this weekend at High Cloud Farm, Monmouth.

Fresh ciabatta loaves, Welsh butter and olive oil on tables.

Foraged nettle and wild garlic Spanakopita with wild green herb Tzatziki. (plus vegan version as needed)

Free-range local pork, slow-cooked Greek style in Red wine with tomatoes, rosemary and olives.
Or, Amazing Roast Caponata Sicilian style (Vegan)
Both served with,
lemon, rosemary and garlic Boulangere potatoes (Vegan)
local seasonal greens sautéed with a whisper of wild garlic (Vegan)
Carrots with gremolata (Vegan)

Baked raspberry and white chocolate cheesecake, with double cream.
or
Apple and cinnamon tart with dairy-free or regular cream. (vegan)

Organic delicata squash, chili and sweet potato soup with porcini pangritata and a drizzle of truffle oil.

Individual hand raised, Roast beetroot, Stilton and candied walnut pie
with a rich porcini and Madeira gravy lemon and rosemary Boulangere potatoes, organic wilted greens and roast baby carrots with gremolata.

Local organic apple and brandy tarte Tatin
With cinnamon salted caramel ice cream.

I’ve recently been reminiscing about my travels in South America and the unforgettable flavours I experienced - and this has inspired me to create the April Lock dine menu. The dishes of Argentina, Brazil and Peru all play a part in this celebration of the passion that is South American cooking.

Infamous Catering

We are a boutique catering company based in the beautiful Forest of Dean in Gloucestershire

Our Head Chef – and the driving force behind the company – is Ian ‘Barney’ Barnes; an obsessive foodie who is now ‘infamous’ for making even the strongest-willed diner come back for seconds. Barney has travelled to over 40 countries in his pursuit of the world’s most #unforgettableflavours. But he’s also passionate about using ingredients that are British, in season and, where possible, locally sourced.

The result is incredible fusion food that sits in perfect harmony with the Gloucestershire seasons.
