Making some oildown in Grenada outside was a great experience. Thanks to Delon who is the oildown King, teaching me the way to cook it. Tasted amazing. Oildown is Grenada’s national dish and is a mix of meats and smoked fish /pork cooked with ground provisions (such as breadfruit, fig, green paw paw), dumplings, callaloo, green beans and seasoned with fresh saffron to give a yellow colour. All good is cooked down in fresh coconut milk which is boiled until it becomes an oil. The ingredients can vary, but the taste is amazing and it makes a filling meal in one pot which is ideal for large families and gatherings. Cooking outside was a great experience and I may try to retry this in the U.K. without anyone making a complaint to the Council about the fire 😂 All jokes aside it was nice getting back to nature, learning new things and partaking in the original way we cooked food in the Caribbean. #caribbeanfood #oildown #grenadaoildown #grenadiandish #grenadafood #elscuisine #isleofspice #onepot #onepotmeal

Once thing that I love for breakfast on a cold morning is banana oats porridge!! Made a quick pot for two this morning as it’s one of hubby’s favourites. Can be used with ripe plantain also.
