“Herbs are the best 🙌🏻 and are so often undervalued and underused. Adding fresh herbs to a dish really can bring it to life and add so much more flavour for not much more effort! Why not try adding some herbs to your cooking over the next week and see how it goes?” - Nomad Fran

Above we have Fran’s incredible dishes of:

1. Nectarines drizzled with olive oil, a good crack of black pepper and lots of fresh thyme ready to be roasted in the oven 👌🏻 Served on a bed of unsweetened soy yog that has been seasoned with lots of lemon juice, salt and pepper! A really delicious but simple late summer dish perfect with flatbreads or a green salad

2. Miso & thyme braised celeriac with zesty cannellini bean purée, roasted toms & spicy coriander and caper dressing.

3. Roasted carrot puff pastry tart with a parsley and dill pesto 🥕 Marinated the carrots in garlic, zatar and maple syrup which is my favourite way to cook them at the moment! Serve up with a fresh side salad for an easy but delish lunch.

Another fabulous seasonal dish by our talented Nomad .schnitzel. Here we have roasted carrots with a white bean purée.

Carrots 🥕 are roasted with various spices; cumin, sumac, caraway then finished with a little honey. They are served on a simple white bean purée where cannelinni beans are cooked down with onion garlic and wine then blended until smooth.

Garnished with carrot tops and herbs.

Wondering where to get your ingredients? We suggest:

🥕 for the carrots

🍯 for the honey

🍷 for the wine

Salads don’t have to be just for summer….

Here we have Warm broccoli, leek and cannellini bean salad with roasted lemon 🍋

Here’s how to make it for yourself this lunch time:

Serves 3-4

Ingredients:

3 cups of broccoli florets

2 leeks sliced

2 tins of cannellini beans, drained

4 lemon wedges

2 tsps of za’atar

Salt and pepper

Method:

Begin by cooking the broccoli. Preheat the oven to 180 degrees. Place the broccoli florets on a roasting tray, drizzle with olive oil, a sprinkle of salt and the za’atar. Roast in the oven for 15-20 minutes.

Heat a little olive oil in a saucepan, add the leeks and gently sauté a low heat for 5 - 10 minutes until softened ensuring they don’t catch and burn.

Add the beans to the leeks and leave on the heat to warm through gently for 2 minutes. Taste and season with salt and pepper. Stir through the broccoli and serve with a drizzle of EVOO.

Sunday morning brunch sorted. 🍳

Wondering what Shakshuka is? 🍅 This is a staple dish at any Israeli 🇮🇱 breakfast – whether you’re in a restaurant or at home – and it’s considered a significant competitor to falafel 🧆 and hummus for the title of ‘best Israeli dish’. The name essentially means ‘all mixed up’ which is exactly what it is, made up of eggs cooked in tomato sauce and peppers, sometimes with onions, other herbs or cheese, and is usually served in the iron pan it was cooked in, along with some bread, which is meant for dipping in the sauce and the soft cooked-egg.

Nomad .schnitzel creates an incredible take on the original dish that includes the addition of chorizo and white beans with homemade tortillas. 🫓
