She is a beauty! ⭐️⭐️⭐️ Want to hear what the judges had to say about our award winning Hot Smoked Trout?

⭐️ - This delicious smoked trout looks fabulous, glossy and nicely smoke-browned. The flesh is exceptionally moist and delicately flavoured with a perfect balance of sweetness. The fish has retained its texture and holds its shape well when cut. Exceptional.

⭐️ - This trout looked impressive with lovely caramel colours from the kiln. The smoke levels were very delicate. The flesh was succulent and flaky and had the perfect level of salt.

⭐️ - This is a majestic side of smoked trout. What a sight to behold! It is dark amber and glistening. When cut, the soft, deep, orangey-pink myotomes of fish flake easily. It looks succulent. On tasting, the texture is rich and buttery, moist and tender. It melts in the mouth. The level of smoking and curing is spot on. This is an absolute delight to eat and we thank you for producing this king of the smoked fish world. Congratulations.

⭐️ - This is delicious, subtly smoked, flaky trout, with firm flesh and a freshness that indicates great care in the hot smoking process. As a product, the appearance is stunning - it would be a real show-stopper as the centrepiece of a table setting. The seasoning is just right, the fish has real depth and substance. It is rich, but not greasy, meaning that the mouthfeel is clean and satisfying.

As you can imagine our wee team are still buzzing here at the Kilnhouse. 🎉🥳
