Look, fluctuating food costs will whine you but don’t panic. Or your own heart doesn't do gbagam gbagam when you check ingredient invoices?
Remember last month when you thought you’d finally cracked the code on your food costs?
Then BAM, before you could say “Jesus was born in Enugu”, avocado prices decide to be funny, and your carefully balanced spreadsheet goes up in flames.
We’ve all been there, staring at those numbers, wondering if we should just switch to serving air sandwiches.
It’s like playing financial Jenga with your menu. One wrong move, and the whole thing comes tumbling down.
And let’s be honest, some days it feels like we’re all just one bad produce season away from saying “I’m not doing again abeg”.

So what do we do? We adapt. We get creative.
First up, get smart with your inventory as I did. Know what you’ve got, what you need, and what you can live without. It’s like playing Tetris, but with food (and hopefully less frustrating).
Next, get creative with your menus. Seasonal specials can be a lifesaver when certain ingredients decide to play hard to get.
My dear, we didn’t get into this business because it was easy. We’re here because we’re passionate, we’re stubborn, and gosh darnit, we make people happy with our food.
