For the Red Velvet Cake:
• 2 ½ cups (310g) all-purpose flour
• 1 ½ cups (300g) granulated sugar
• 1 tsp baking soda
• 1 tsp salt
• 1 tsp cocoa powder
• 1 cup (240ml) vegetable oil
• 1 cup (240ml) buttermilk, room temperature
• 2 large eggs, room temperature
• 2 tbsp (30ml) red food coloring
• 1 tsp vanilla extract
• 1 tsp white vinegar

Swiss meringue buttercream has been my best plug for covering cakes - nice, smooth and creamy and it forms up quickly ensuring your design stays on for long

I have tried all others but still find myself coming back to using it over and over again
This is my recipe below:

4egg white
1cup of sugar
320g of butter

Procedure
In a clean bowl add sugar and egg white and put over boiling water (double boiling)
Whisk the sugar and egg mixture that is over the boiling water
Continue boiling until you can no longer feel any grain from the mixture
Bring down and allow to cool
Using a stand mixer (most preferred) whisk until it forms a white peak
Then add your butter in small chunks
Continue to beat until well combined it will even look curdled but not to worry.
Your SMBC is ready
