Sometimes things don’t work out - I am still on a journey to my childhood memories and had my first try at making Scottish Tablet… it’s a lot harder than one might think. Texture was all wrong but the taste was spot on. Lessons I learned: don’t use a silicon whisk but a strong metal one. Have cold water ready to place the pot in and make sure you pour the mix into a lined form as quick as possible. Now I have to see how to clean the pot 🥴 might give it another try in a few weeks after I recover from the trauma

The older I get, the more I reminisce about the ‘good ol’ times’ and one memory I cherish is the rice pudding my mum made for us from leftover rice. In Germany it’s called Milchreis (milky rice) and it’s delicious. She always sprinkled a sugar/cinnamon mix over it which I still do. With the cold weather all I want to do is snuggling up in front of the fire. And nothing warns the tummy better than a hot saleb - a Turkish milk drink made with the root of orchids sprinkled with cinnamon … a sweet thick milky drink I love. Sometimes, accidents are happy ones. About 2.5 years ago, I had a surplus of blackcurrants and decided to steep them in gin with a vanilla pod and some sugar. I then stored it on a dark place until a recent clear out made it appear again. After all that time, the flavour is a deep dark fruit with a hint of vanilla with a slight syrupy texture. Love it…

Got a bit peckish on the way home - almost missed @woodfieldcafe_and_gardencentre - so glad we made the u-turn. Lovely little cafe with a great selection of artisan produce, delicious food and tasty cakes… Mr T was very happy with his Bakewell tart and my falafel wrap was yummylicious #hiddengem #gardencafe

My battery is dying so this is the last update for tonight - what a great awards night organised by @yeschef.ireland @shaneyeschef @niccismith_irishawards and MCed by @chefadrianm yours truly even handed out some awards (nerve wracking).

A beautiful day @dripsey_castle today for their Autumn Day - excellent foraging walk and talk by Teresa Harrington, followed by a delicious lunch prepared by one of my favourite chefs @_bryanphelan_ of @villagedeli_ltd - ended the day with a relaxing yoga session with Paula O’Riordan. The estate has been beautifully restored with many original features still in place. Read more about my day in Thursday’s @corkindependent - check out upcoming events at the castle. Next weekend you can enjoy a great tapas night. Thank you to Sandy for inviting me
