Mava Cake is a quintessential Mumbai Parsi cake, available at all the Irani restaurants along with maska bun, cutlets, lagan nu custard, berry pulao and Irani tea. It is simple but has a rich flavour as it's made with mava or milk solids, and topped with nuts.
I used to buy it frequently when I lived in Mumbai and simply love the dish.
So today I decided to bake it at home. This eggless version turned out to be super soft and fluffy, and dreamy too. Yum Yum. πŸ˜‹

Gudi Padwa Lunch: Shrikhand Puri is a must for Marathi people on this day! Also Varan Bhat Tup Limbu...Dal, rice, ghee and lemon; Aloo sabzi, Tomato Saar ( made with blanched tomatoes and coconut milk), Khamang Kakdi ( cucumber salad with crushed peanuts), Peanut chutney, and buttermilk to balance it. 😌🀀

No matter where in the world I am, I will never forget my roots and my culture. Today is Gudi Padwa, the new Year for Maharashtrian. Also Ugadi for Kannada and Telugu people. My friend Vatsala Vitastini tells me it's Navreh in Kashmir. What a beautiful occasion!
This is my Gudi. A silken cloth pleated on a wooden stick, with a silver urn, bunches of mango and neem leaves, flower garland, and a garland of sugar discs, made at home by yours truly.
May Bhagwan bless us. All good wishes to those who are celebrating the Hindu New Year today.

It was backbreaking work but intensely soul satisfying. Running a chaat counter, heating pav bhaji and parathas, taking orders, serving people, all at the same time...made my head fuzzy by evening. But I cannot put a price tag on the happiness I felt when I saw people heartily tuck into my food. Hats off to Mini Vasudevan Soumya Ram Shilpa Arun Menon and Bindu for organizing and promoting this event. Ladeez you did a wonderful wonderful job. Heartfelt gratitude to friends and family who dropped in to have my food. It was a humungous success for me personally as everything was sold out by closing time. 0 wastage! My heart is full today. Gratitude to Mahadev for his blessings. πŸ™

So this young man was sent to my place by Google. A native of Patthanamthitta who is currently working in Thalassery for Malabar Cancer Hospital, had come to Calicut for some work. A foodie, he was searching for some authentic North Indian food, and came across Sunila's Veggie Delights on Google. Seeing vada pav and pav bhaji and so on on my menu, he came over, not knowing it was a catering service and not a restaurant. I was busy preparing for the Fair tomorrow where I'm putting up my stall, but I could not disappoint this pleasant young man so asked him to return in a bit, and made him poha and pav bhaji. He was thrilled to bits. We had a pleasant time talking about various subjects. He inaugurated my QR scannabble too. Food truly brings people together. Wish you luck in all your endeavours, Eby!

Ever since I saw Sanjeev Kapoor making this Uber exotic dish, I have been dying to try it out at home. Today was that day. Finally! It was extremely labour intensive! Back breaking work and time consuming. Especially when you have a big family and one of them is a teenaged boy. Kofta Shyam Savera is a dish with koftas made of crispy spinach filled with melt in the mouth paneer, served on a thick gravy of onions, tomatoes, and cashews. Of course there's butter and cream. Very mildly spiced, but the mace strands give it a zing to remember. It's a fusion of flavours. Served with hot Parathas just off the tawa, and it was all polished off in minutes. Truly heavenly food..fit for Royals!

Sunday special! Ghee rice, Soya Masala Malabari, Mix Veg Curry, Pudina Coconut Chutney and Raita.
Ghee Rice is the go to special rice dish of Malabar. It's an amiable dish that pairs well with a variety of gravies - even the quintessential favourite 'Chinese' dish Gobi Manchurian, often seen as Gopi Manjoori on restaurant menus in Kerala. Chammanthi or thick coconut chutney is a must-have accompaniment. And how can you not have raita? Sunday deserves an elaborate lunch. Sometimes ;)

Veg Kofta curry. Seems to be a favourite with my customers, apart from paneer dishes. I use a paniyaram pan to make these koftas which helps in retaining their shape and preventing breaking. Dunked into a mildly spiced gravy of onion and tomato, a hint of cashew paste and garnished with coriander leaves and fresh cream. Makes for a pretty picture and salivating faces!

Misal Pav. Quintessentially Mumbaiyya. While it can also be made with Sookha Vatana or dehydrated peas, I prefer the healthy version with matki. Unfortunately, it's not available in Kerala and we have to rely on Amazon or family traveling to or from Mumbai to get it. So the next best thing is Moong. Sprouted and then cooked like an 'usal' with onion, Amsul or kokum, and Maharashtrian Goda Masala, it is served with sizzling host n spicy tarri, garnished with Farsan and coriander leaves and with a side of soft pav and onions.
A customer ordered this yesterday and we too had it for dinner.
The tarri is made from garlic, salt, water, oil, and lots of chilli powder. You know the tarri is good when your eyes and nose water with the first morsel of the Misal. Bliss.😌

Massive order that I fulfilled a day ago. It was exhausting but extremely satisfying.
12 sets Pav Bhaji, 12 sets Amritsari Chhole Bhature, 8 Jeera Rice Dal tadka combo, 20 fulkas and 5 Portions Rara Paneer. Thanks to the cleaning and chopping help from my helpers, and my mom's help in frying bhaturas which I sadly missed taking pics of.

Everything was otherwise cooked by me solely. Every masala used is homemade.

The Frankie is perhaps the most iconic street food dish in Mumbai after Vada Pav. Amarjit Singh Tibb, a national hockey player after eating a pita roll in Beirut, decided to tweak the taste a bit to make it more appealing to the Indian palate - his wife experimented, and the 'mutton nan roll' as it was called then, was born! LAter, he set up Tibb's Frankies, with vegetarian, and Chicken variants. Today, his sons Charanjit and JAsmit run a Frankie Empire with outlets in 25 countries!
After several tries, I have succeeded in recreating the taste of the iconic regular Veg Frankie of Tibb's.
