# # # Ingredients:
- 1 kg mutton (with bone), cut into pieces
- 1 cup plain yogurt
- 1/2 cup ghee or oil
- 3-4 onions (finely sliced)
- 2 tomatoes (finely chopped or pureed)
- 2 tablespoons ginger-garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder (adjust to taste)
- 2 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon garam masala powder
- Salt (to taste)
- 1 cup warm milk
- Saffron strands (optional, soaked in a little warm milk)
- Chopped cilantro, mint leaves, and fried onions for garnish

# # # Whole Spices:
- 2-3 green cardamom pods
- 2-3 cloves
- 1-inch cinnamon stick
- 1 bay leaf
- 1 black cardamom pod

# # # Instructions:
1. Heat ghee/oil in a heavy-bottomed pot. Add the whole spices and let them splutter.
2. Add the finely sliced onions and sauté until they turn golden brown.
3. Stir in the ginger-garlic paste and cook until the raw smell disappears.
4. Add mutton pieces and cook until they get a good sear and turn slightly brown.
5. Pour in the yogurt, tomatoes, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Cook until the oil separates from the masala.
6. Add warm milk (and saffron if using), cover the pot, and simmer on low heat until the meat is tender and the gravy thickens. This might take around 1.5 to 2 hours.
7. Adjust seasoning if needed. Garnish with chopped cilantro, mint leaves, and fried onions before serving.

This Mughlai-style Mutton Korma is a rich, flavorful dish best enjoyed with naan, sheermal, or rice. The slow cooking process and the blend of aromatic spices make it an absolute delight! Adjust spice levels according to your taste preference.

Ingredients:
- 1 kg beef (with bones)
- 1/2 cup ghee or oil
- 4 onions (finely sliced)
- 4 tablespoons ginger-garlic paste
- 2 tablespoons wheat flour (optional, for thickening)
- 2 teaspoons red chili powder
- 1 teaspoon turmeric powder
- 3 teaspoons coriander powder
- 2 teaspoons garam masala
- 1 teaspoon cumin powder
- 1 teaspoon fennel powder
- Salt (to taste)
- 8-10 cups water
- 4-5 pieces bone marrow (optional)
- 4-5 pieces trotters (optional)
- Chopped fresh coriander leaves for garnish
- Sliced ginger for garnish
- Lemon wedges

Instructions:
1. Heat ghee/oil in a large pot. Add sliced onions and cook until they turn golden brown.
2. Add ginger-garlic paste, beef, and spices (red chili, turmeric, coriander, garam masala, cumin, fennel, salt). Cook for 5-7 minutes until the beef changes color.
3. If using wheat flour, sprinkle it over the mixture and cook for another 2-3 minutes.
4. Pour water into the pot, add bone marrow and trotters (if using), and bring to a boil.
5. Reduce heat, cover the pot, and let it simmer for 6-8 hours until the meat is extremely tender and the flavors are well infused. This slow cooking is crucial for the authentic taste.
6. Adjust salt and spice levels if needed. Garnish with chopped coriander leaves, sliced ginger, and serve hot with naan or rice, along with lemon wedges.
