Mango Sago
Ingredients:
1 cup small sago pearls
4 cups water
1 cup coconut milk
1/2 cup white sugar
1/4 tsp salt
2 ripe mangoes, peeled and diced
Sweetened condensed milk for drizzling (optional)
Instructions:
In a pot, soak the sago pearls in the 4 cups of water for 30 minutes.
After soaking, bring the pot to a boil over high heat. Once boiling, reduce heat to low and simmer for 15-20 minutes, stirring occasionally, until the sago pearls are translucent and have expanded in size.
Drain the excess water from the sago pearls and return them to the pot.
Add the coconut milk, sugar and salt. Stir over low heat for 2-3 minutes until the sugar has dissolved and the mixture is heated through.
Remove from heat and allow to cool slightly.
In serving bowls or cups, layer the sweetened sago pearls and diced mango pieces.
Drizzle with some sweetened condensed milk if desired.
Serve chilled
