La Antica Daunia corrisponde quasi integralmente al territorio della provincia di Foggia, culla del grano duro italiano, da sempre. La cooperativa Daunia & Bio è una organizzazione di produttori biologici, nata con l'intento di aggregare ed organizzare l'offerta delle produzioni dei soci, qualificarle e legarle al territorio di provenienza. i nati sul territorio, come il grano "Senatore Cappelli", varietà selezionata nel 1915 da Nazareno Strampell, che avrebbe rivoluzionato la qualità e la produttività del grano duro, in Italia e nel mondo ed il grano “Lesina”, selezionato nel 1998 dal CRA-CER. Dalle semole di queste due varietà è stata ottenuta questa pasta, così ricca di profumi e sapori.
