Meet the Breweries !!!

Tokyo Sake Collection is just around the corner, and over the next few days, we will be introducing the breweries who are showcasing their sake at the event.

As there is a slight anime theme to this event, we asked each brewery to recommend an anime or manga that they like. Tamanohikari Shuzo in Kyoto recommended that age-old favorite, Doraemon, the blue cat from space.

Tamanohikari Shuzo (Oct 12: W10, Oct 13: S14, Oct 14: S13 & S14 ) (exhibiting on all days, Oct 12, 13, and 14)
A long-established brewery, founded 350 years ago, which was also patronized by Lord Yoshimune. Their main brand is Tamanohikari.

Featured Sake:
Sake name: TAMA junmai ginjo
Type: a bitter-sweet taste profile produced through a fusion of wine and sake-making techniques.

Bonus fact: the rice this sake is made with Omachi, is the oldest variety of sake rice. It is an heirloom rice, that was discovered by a farmer on a return from a pilgrimage in 1859.

Meet the Breweries !!!

Tokyo Sake Collection is just around the corner, and over the next few days, we will be introducing the breweries who are showcasing their sake at the event.

As there is a slight anime theme to this event, we asked each brewery to recommend an anime or manga that they like. Hana no Mai Shuzo in Shizuoka Prefecture recommended the manga, Hayate no Gotoku, a story about a loyal butler.

Hananomai Shuzo (S9) (exhibiting on all days, Oct 12, 13, and 14)
Fastidiously crafted sake brought to life with local ingredients, using purely the plentiful underground water from the Akaishi Mountains and Shizuoka-grown rice. Their main brand is Hananomai

Featured Sake:
Sake name: Abysse Genshu
Type: a flamboyant taste experience crafted with yeast from France's Bourgogne region.

Bonus fact: the brand name Hananomai means flower dance, and is one of the traditional "Hono Odori" (dances of dedication) passed down from antiquity along the Tenryu River System.

Kokki Shuzo (S5) (exhibiting on all days, Oct 12, 13, and 14)
Originally a producer of predominantly dry sake, this brewery in the mythical land of Shimane is now challenging a more modern sweet\savory profile. Their main brand is Kokki.

Featured Sake:
Sake name: Kokkitai Beige Junmai Daiginjo
Type: refreshing type with a lemongrass-like aroma and refreshing acidity.

Bonus fact: Shimane is often regarded as sake’s spiritual birthplace.

Tokyo Sake Collection doesn't just bring the sake breweries, there will also be kitchen cars serving delicious food to pair with the sake.

Other dishes include sake kasu (lees) matured karaage, seared scallop frill, and corned beef & mascarpone potato salad.

Tokyo Sake Collection is just around the corner, and over the next few days, we will be introducing the breweries who are showcasing their sake at the event.

As there is a slight anime theme to this event, we asked each brewery to recommend an anime or manga that they like. Tentaka Shuzo in Tochigi Prefecture recommended Jojo’s Bizarre Adventure and Fist of the North Star.

Tentaka Shuzo (S7) (exhibiting on all days, Oct 12, 13, and 14)
Tentaka is leading sake making into the future while honoring their traditional brewing roots. They are one of the few breweries in Japan to brew organic sake. Their main brands are Tentaka and Kyubi.

Featured Sake:
Sake name: Kyubi Junmai Daiginjo Muroka Nama Genshu 48% Polished
Type: Juicy aromas/flavors of melon and muscat.

Bonus fact: In Japanese mythology, the Kyubi (nine tailed fox) can change its color and has the power to see into the future.

Tokyo Sake Collection is just around the corner, and over the next few days, we will be introducing the breweries who are showcasing their sake at the event.

As there is a slight anime theme to this event, we asked each brewery to recommend an anime or manga that they like. Sudo Honke in Ibaraki Prefecture recommended the volleyball manga, Haikyu.

Sudo Honke (Booth Day 1:S10, Day 2:S11) (exhibiting on Oct 12 and 13)
As well as being the oldest surviving sake brewery in Japan they make only junmai daiginjo , which they brew with respect for nature and deliver fresh. Their main brand is Sato no Homare.

Featured Sake:
Sake name: Sato no Homare Kurokin muroka namanama junmai daiginjo
Type: flamboyant and rich with notes of blackberry, pear and black currant.

Bonus fact: in 2016, the brewery’s sake was served at the G7 Isse-shima Summit.

As there is a slight anime theme to this event, we asked each brewery to recommend an anime or manga that they like. Iwase Shuzo in Chiba Prefecture recommended Draft King.

Iwase Shuzo (Booth W3) (exhibiting on Oct 12,13, and 14)
The brewery’s sake is made with super hard brewing water, over 240mg/L, does sake get any more robust than this? Their main brand is Iwanoi.

Featured Sake:
Sake name: Iwanoi junmai daiginjo 30%
Type: Daiginjo with a sweetness and a firm acidity.

Bonus fact: The beams of the thatched-roof main structure of the brewery are made from the mast of the San Francisco, a Spanish galleon shipwrecked off the coast of Onjuku in 1609.

Hakutsuru Shuzo (Booth W2) (exhibiting on Oct 14)
Located in Hyogo Prefecture, the brewery crafts sake that embodies timelessness and kindness. Their main brand is Hakutsuru.

Featured Sake:
Sake name: Hakutsuru Blanc
Type: a light tasting junmai sake with a white wine-like taste profile.

Bonus fact: Hakutsuru has an amazing museum full of sake-related exhibits, including old sake-making equipment, and archive footage of sake’s past. It’s well worth a visit!

What type of sake does a fan of Deathnote craft?

Tokyo Sake Collection is just around the corner, and over the next few days we will be introducing the breweries who are showcasing their sake at the event.

As there is a slight anime theme to this event, we asked each brewery what their favorite anime is. Takeda Shuzoten in Niigata Prefecture loves Deathnote.

Takeda Shuzoten (Booth S12) (exhibiting on Oct 12 and 13)
The brewery is located in Niigata Prefecture, the rice basket of Japan famous for its skiing. They have been crafting delicious sake for over 160 years. Their main brand is Katafune.


Featured Sake:
Sake name: Ichigo Hana
Type: sweet and savory strawberry liqueur with a rose-wine-like flavor profile.

Bonus fact: Strawberries are often used to convey the meaning of a happy family, they also bring happiness.

What type of sake does a fan of HUNTER x HUNTER craft?

Tokyo Sake Collection is just around the corner, and over the next few days we will be introducing the breweries who are showcasing their sake at the event.

As there is a slight anime theme to this event, we asked each brewery what their favorite anime is. Takeno Shuzo in Kyoto answered HUNTER x HUNTER.

Takeno Shuzo (Booth W5) (exhibiting Oct 12, 13 and 14)

Takeno Shuzo is located in Kyoto. Their ethos is all about locking in the power of fermentation like never before for a new taste experience. Their main brand is Yasakatsuru.

Featured Sake:
Sake name: Hiyaoroshi junmai ginjo Kame no O Kurabu
Type: smooth, mild, balancing both sweetness and acidity with a pleasant effervescence like a cool breeze.

Bonus fact: hiyaoroshi is a special fall sake which has been stored throughout the summer to create a milder taste profile.
