Menu Mondays 🥳

Christmas is approaching, tulisema this time we are doing it right ☺️.

Here's a simple recipe to make chicken at home.

Ingredients
For the Chicken:
4-6 pieces of chicken (legs, thighs, or breasts)
1 cup buttermilk (or milk with 1 tbsp vinegar)
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp cayenne pepper (optional for heat)
For the Coating:
1 cup all-purpose flour
1 tsp baking powder
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp cayenne pepper (optional)
Instructions
Marinate the Chicken:

In a bowl, mix the buttermilk with salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper.
Add the chicken pieces and ensure they are well coated.
Cover and refrigerate for at least 2 hours (or overnight for best results).
Prepare the Coating:

In a separate bowl, combine flour, baking powder, salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper.
Coat the Chicken:

Remove the chicken from the marinade, letting excess drip off.
Dredge each piece in the flour mixture, pressing gently to ensure an even coating.
Fry the Chicken:

In a deep skillet or fryer, heat oil to 170°C. Use enough oil to submerge the chicken pieces.
Carefully place the coated chicken in the hot oil. Fry in batches to avoid overcrowding.
Cook for about 12-15 minutes, turning occasionally, until the chicken is golden brown and cooked through (internal temperature should reach or 75°C).
Drain and Serve:

Remove the chicken and drain on paper towels.
Let it rest for a few minutes before serving.
Tips
For extra crunch, double-dip the chicken: after the first coat of flour, dip it back into the buttermilk and then back into the flour.
Serve with coleslaw, fries, or your favorite sides for a complete meal!

Sijakataa ugali ya jana huslap sana asubuhi na chai haina sukari lakini let's try something different this time 🤣🤣.

Ndio hii recipe ya mandazi/mahamri poa🥳

Ingredients:
- 3 cups all-purpose flour
- 1 cup coconut milk (or regular milk if preferred)
- 1/4 cup sugar
- 1 teaspoon active dry yeast
- 1/2 teaspoon cardamom powder (optional but traditional for flavor)
- A pinch of salt
- Oil for frying

Instructions:

1. Prepare the dough:
- In a small bowl, mix the yeast with a tablespoon of warm water and a pinch of sugar. Let it sit for about 5-10 minutes until it becomes foamy (this activates the yeast).

2. Mix dry ingredients:
- In a large bowl, combine the flour, sugar, cardamom powder, and salt.

3. Add wet ingredients:
- Pour the activated yeast mixture into the dry ingredients.
- Gradually add the coconut milk while mixing the dough. Knead the dough until it becomes smooth and soft. You may need to add a little extra flour if the dough is too sticky or more milk if it's too dry.

4. Let the dough rise:
- Cover the dough with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1 to 1.5 hours, or until it doubles in size.

5. Shape the Mahamri:
- Once the dough has risen, punch it down to release the air.
- Divide the dough into small balls (about the size of a golf ball), and roll each ball into a circle or triangle, about 1/4 inch thick.

6. Frying:
- Heat oil in a deep frying pan over medium heat.
- Fry the Mahamri in batches until they turn golden brown on both sides. Be sure to turn them occasionally to ensure even frying.
- Once done, remove them from the oil and place them on a paper towel to drain excess oil.

7. Serve:
- Enjoy your soft Mahamri with tea or as a side dish with stews and curries.

For extra softness, ensure the dough is well-kneaded and allowed to rise properly. The coconut milk adds richness and softness, while cardamom gives it that distinct flavor.

Menu Mondays🎉

How To Make Soft Chapatis💁‍♀️🔥

Ushai kaa ivi ukajiuliza mbona chapo za watu hukua soft na zako ukipika inabidi tuzivunje na panga? Worry no more. Ndio hii menu Christmas inakaribia na hatutaki aibu.

Ingredients:
2 cups whole wheat flour (atta)
¾ cup warm water (adjust as needed)
1 tbsp oil (optional for softness)
½ tsp salt (optional)

Instructions:
1. Prepare the Dough:
In a large bowl, mix the flour and salt (if using).
Gradually add warm water while kneading to form a soft dough.
Add oil and knead for 8-10 minutes until the dough is smooth and pliable.
Cover the dough with a damp cloth and let it rest for 20-30 minutes.
2. Roll the Chapatis:
Divide the dough into equal-sized balls (about the size of a golf ball).
Lightly flour a surface and roll each ball into a thin, round disc (around 6-8 inches in diameter).
Avoid applying too much pressure, as this might cause uneven thickness.
3. Cook the Chapatis:
Heat a pan(ile ya chapo si ya mayai) or skillet over medium-high heat until hot.
Place the rolled chapati on the hot pan.
Cook for 30-40 seconds until bubbles start to form, then flip.
Cook the other side for another 30-40 seconds, pressing gently with a spatula to help it puff.
Flip one more time and cook for a few seconds until golden brown spots appear.
4. Keep Chapatis Soft:
Stack cooked chapatis in a clean kitchen towel and keep them covered to retain moisture.
Optionally, apply a thin layer of butter or ghee while warm.

Tips for Soft Chapatis:
Resting the dough helps develop gluten, making chapatis softer.
Use warm water during kneading to enhance softness.
Do not overcook; excessive heat can make them dry and hard.
