Eggless Chocolate Muffins: Looking for a deliciously rich and moist treat? These double chocolate muffins are the perfect answer. Whether you're vegan or just out of eggs and dairy, this easy one-bowl recipe will satisfy your chocolate cravings. With a combination of cocoa powder and dark chocolate chips, these muffins are sure to be a hit for breakfast, dessert, or any time you need a sweet indulgence. Enjoy the simplicity and flavour of these delightful muffins that everyone will love!
Makes 5 jumbo muffins or 8 regular muffins
Ingredients:
130ml (1/2 cup + 1 tablespoon) Milk (unsweetened almond milk or any plain milk of your choice)
1 teaspoon White Vinegar (or apple cider vinegar / lemon juice)
2 teaspoons Vanilla Extract
75g (1/3 cup) Light brown sugar / coconut sugar / cane sugar
60ml (1/4 cup) Oil (any neutral oil for baking)
140g (1 cup + 2 tablespoons) All-Purpose Flour
15g (3 tablespoons) Cocoa Powder
1 1/2 teaspoons Baking Powder
1/4 teaspoon Baking Soda
1/8 teaspoon Salt
120g (3/4 cup) Dark Chocolate Chips 🍫
Method:
In a mixing bowl, combine the milk, vinegar, brown sugar, oil, and vanilla extract.
Add all the dry ingredients and mix until fully combined. Fold in 3/4 of the chocolate chips. Cover and let the batter rest at room temperature for 30 minutes.
Line a muffin tray with muffin liners (I used a jumbo muffin tray). Fill each liner with batter until almost full.
Bake at 400°F for 8 minutes. Then, reduce the temperature to 350°F and bake for another 8-10 minutes, depending on the size of the muffins. They are done when firm to the touch on top. Add the remaining chocolate chips on top.
Let them cool on a wire rack for 10-15 minutes and enjoy! Store at room temperature in an airtight container for 4-5 days.

This recipe is easy to make and perfect for beginners or experienced bakers. It's the ultimate comfort food to gratify your sweet tooth at any time of the day. Let's get started!
Chocolate Chip Banana Bread.
Ingredients:
• 250g All-Purpose Flour
• 220g Light Brown Sugar
• 1.5 tsp Baking Powder
• 1 tsp Baking Soda
• 1/4 tsp Salt
• 1/4 tsp Cinnamon Powder
• 240g Unsweetened Plain Yoghurt (use almond yoghurt or any plain yoghurt of your choice)
• 230g bananas (mashed, about 2 bananas)
• 120ml Vegetable Oil (or any flavourless oil)
• 80g Dark Chocolate Chips
Instructions:
1. Preheat your oven to 370°F (190°C).
2. In a large mixing bowl, combine the yoghurt, mashed bananas, oil, and light brown sugar. Mix until the sugar dissolves.
3. Add the flour, baking powder, baking soda, salt, and cinnamon to the wet ingredients. Stir until fully combined.
4. Fold in the dark chocolate chips.
5. Lightly grease an 8-inch loaf pan and line it with baking paper. Pour the batter into the pan.
6. Run a knife about 1/4 inch deep through the middle of the batter from one end of the pan to the other.
7. Bake for 30-35 minutes, or until a toothpick inserted into the centre comes out clean.
8. Let the loaf cool in the pan for 30 minutes, then carefully remove it and allow it to cool completely on a cooling rack.
9. For best results, store the loaf in an airtight container or wrap it in plastic wrap.

Banana Cream Pie (Eggless, Vegan, and Dairy-Free)
Ingredients:
Pie Crust:
1 1/2 cups all-purpose flour
1/2 cup cold non-dairy butter (cubed)
1/4 cup ice water
1 tablespoon sugar
Pinch of salt
Vanilla Custard:
300ml (1 cup + 1/3 cup) unsweetened almond milk (or any milk of choice)
100g (1/2 cup) granulated sugar
24g (3 tablespoons) corn starch
40g (3 tablespoons) non-dairy butter (or any butter of choice)
3 teaspoons vanilla extract or vanilla bean powder
Pinch of salt
Pinch of turmeric powder (optional, for color)
Whipped Cream:
240ml non-dairy whipping cream
40g powdered sugar
2 teaspoons vanilla extract
Banana Layer:
2-3 fresh bananas (sliced)
Instructions:
For Pie Crust:
Preheat your oven to 350°F (175°C).
In a bowl, mix the flour, sugar, and salt. Add the cold non-dairy butter and mix until it forms a crumbly texture.
Gradually add ice water and mix until the dough comes together.
Roll out the dough on a floured surface and fit it into a pie dish.
Prick the crust with a fork and bake for 20-25 minutes until golden brown. Let it cool completely.
For Vanilla Custard:
In a saucepan, mix almond milk, sugar, and corn starch. Whisk continuously over medium heat until it thickens.
Remove from the heat and stir in the non-dairy butter, vanilla extract, salt, and turmeric powder (if using).
Let the custard cool, stirring occasionally to prevent a skin from forming.
For Whipped Cream:
In a chilled bowl, whip the non-dairy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
Assembling the Pie:
Spread a thin layer of the cooled vanilla custard on the pie crust.
Add a layer of sliced bananas over the custard.
Spread the remaining custard over the bananas.
Top with whipped

Ingredients:
- 6 rashers streaky bacon
- 2 eggs
- ⅓ capsicum (bell pepper), diced
- ½ avocado, smashed
Directions:
1. Preheat your oven to 350°F (175°C).
2. Spray a muffin tin with oil, ideally olive or coconut oil.
3. Lay 3 slices of bacon in each muffin hole, forming a case.
4. Bake in the oven for 5 minutes.
5. Remove from the oven and crack an egg into each bacon case. Top with diced bell pepper.
6. Return to the oven and bake until the eggs are cooked to your liking, about 5-10 minutes.
7. Remove from the oven and top with smashed avocado.
