You should avoid deep frying with olive oil; there are better oils for high-heat cooking.

There is a common misconception that you should never fry with olive oil, but in reality, it’s perfectly safe for sautéing or shallow frying at moderate temperatures. However, olive oil—especially extra virgin—is not suitable for deep frying due to its lower smoke point and delicate compounds that break down at high heat. When heated above 210°C (410°F), olive oil can lose its beneficial antioxidants and potentially develop off-flavors and harmful compounds. For deep frying, it’s better to use oils like peanut, palm, or canola oil, which are more stable at high temperatures and offer a more neutral flavor.
