Discover our take on classic Quesadillas but with a twist of red lentil and quinoa magic!
What you need ? ⬇️
Ingredients:
* 2 cooked Red lentils & quinoa patties
* 1/2 cup chopped onion
* 1/4 cup chopped garlic
* 1/2 cup canned sweet corn
* 1/4 cup salsa sauce
* pinch of brown sugar
* 1 TBS. butter
* 2 large tortillas
* about 1 cup shredded vegan cheese or any cheese of your choice
* Salt
* 1/2 teaspoon salt
* 1/2 teaspoon black pepper
* 1/2 teaspoon smoked paprika
Method
* Start by cooking your patties (Air fry for 20 mins or oven bake for 30 mins at 200 degrees)
* In a skillet, on medium heat put the salsa sauce, the brown sugar, the onion and garlic and stir well.
* Add the sweet corn, break your cooked patties into pieces and add to the mixture. Stir until warmed through.
* Add the smoked paprika, salt and pepper, let it simmer for 2 minutes then remove from heat.
* In another skillet, heat 1-2 tsp. light butter. When melted, add one tortilla. Sprinkle 1/4 cup cheese on top and some of veggie patties mixture.
* Top with another 1/4 cup cheese and another tortilla and cook on medium-low heat.
* Flip when bottom tortilla is lightly browned.
* Cut into triangle slices (Repeat the process if you want more slices )
* Serve with salsa, or sauce of your choice, green onions, cilantro, etc. I personally eat them just like that with no sauce :)

Oops, we cranked up the heat! 🔥 Our vegan twist on the classic chili con carne is not for the faint-hearted 🌶️
Spice up your tastebuds with Mé’s version of Chilli Con Carne ⬇️
Ingredients
Extra virgin oil- 2 TBS
Onion- 1 - diced
Garlic- 3 cloves - chopped thinly
Carrots (1/2 cup)- diced
Red and Yellow bell peppers diced (1/2 of each)
Tomato puree- 1/2 tin
2 cooked Mé patties Red kidney and nuts
Chilli flakes- 1 TBS (Optional/ depends if you want it spicy)
Jalapeños- About 7/8 pieces (Optional depends if you want it SUPER spicy)
Salt - 3/4 teaspoon
Black Pepper- 1/4 teaspoon
Smoked paprika 1/2 teaspoon
1/2 cup water
Avocado- 1/2
Nutritional yeast (Optional)
Method:
1. Heat up the olive oil in a big saucepan over medium heat. Add the onion and black pepper and fry until they are soft.
2. Add the puree, stir well
3. Add the garlic and stir again
4. Then add your bell peppers and carrots, stir well and add water
5. Add the smoked paprika, the salt and the chilli flakes, stir well, cover and let it cook for 10 minutes, and bring to a boil.
6. When the mix starts bubbling, add your cooked patties to the sauce and break them to small pieces to incorporate well in the sauce; lower the heat and simmer for another 3-4 minutes.
7. Add your jalapeños and stir well, them remove from heat
8. Serve with diced avocado and sprinkle some nutritional yeast on top (can be eaten with rice also)

Ingredients:
Nourishing bowl
Cooked cauliflower rice - 2 cups
Edamame beans - 1/2 cup
Sun-dried tomatoes- 5 pieces sliced
Shredded Red cabbage- 1/2 cup
Shredded carrot- 1/4 cup
Avocado- 1/2
Mini patties (One of each or those of your choice)
Micro-greens - one handful
Sesame seeds- as you wish
Salad dressing:
Smoked paprika mayonnaise (Et Mé Créa)- 1/2 cup
Dijon mustard - 1TBS
Nutritional yeast- 2 TBS (OPTIONAL)
Capers- 2 TBS
Lemon - 2 TBS
Soy sauce- 1 TBS
Agave syrup- 1 TBS
Olive oil- 1 TBS
White vinegar- 1/4 teaspoon
Method:
1. Cook your mini patties- Air fry for 20 mins or oven bake for 30 mins at 200 degrees
2. Start by filling the bottom of your bowl with cauliflower rice
3. Place the edamame, sun-dried tomatoes, shredded cabbage, carrot, & avocado in small piles on the top/ all around of the bowl
4. Place the mini patties in the center
5. Garnish with some micro greens & sprinkle some sesame seeds
6. Dress with the salad dressing
7. Enjoy 🙂
