Cajun Chicken and Spinach Pasta

Ingredients:
8 oz fettuccine or penne pasta
1 lb chicken breast, cubed
2 cups fresh spinach, roughly chopped
2 tbsp olive oil
1 tbsp Cajun seasoning
1 tsp paprika
½ tsp garlic powder
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan cheese
¼ cup cream cheese
2 cloves garlic, minced
¼ cup chopped parsley (for garnish)
Salt and pepper, to taste
Instructions:
1️⃣ Cook the Pasta:
Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
2️⃣ Season and Cook the Chicken:
Season the cubed chicken with Cajun seasoning, paprika, and garlic powder.
Heat olive oil in a large skillet over medium heat. Sear the chicken until golden brown and cooked through (about 6-8 minutes). Remove from the skillet and set aside.
3️⃣ Prepare the Sauce:
In the same skillet, sauté minced garlic for 1 minute until fragrant.
Add chicken broth and heavy cream, stirring well.
Gradually whisk in Parmesan cheese and cream cheese until the sauce is smooth. Season with salt and pepper to taste.
4️⃣ Add Spinach and Combine:
Stir in the chopped spinach and let it wilt for about 2 minutes.
Return the cooked chicken and pasta to the skillet, tossing to coat everything in the creamy sauce. If the sauce is too thick, add reserved pasta water as needed.
5️⃣ Garnish and Serve:
Garnish with chopped parsley and serve warm.
