Added 30% of freshly ground Black Wheat berries imported from Punjab, India. This variety of pigmented wheat developed by crossing purple and blue wheat, which contributes to its rich anthocyanin properties and dark color.

Black wheat possess higher protein content, iron & zinc, dietary fiber, calcium, vitamin K, total flavonoid (TFC) , phenolic content (TPC), and antioxidant activity. This makes Black Wheat a healthy option.

Sourdough Shokupan

Shokupan is an outlier loaf. It is super soft (pillowy) in texture, subtly sweet with creamy and milky in flavour. If we put challah on one end of the bread sweetness spectrum with brioche on the other and white bread in the middle, shokupan is somewhere between brioche and white bread.
