Tips for a perfect chin chin

1. Avoid to much of margarine/ butter when mixing the dough. Too much butter will make your dough soggy, and this will end up drinking up your oil for frying.
2. Too many eggs is not what make ur chin chin rich, egg contribute to making ur Chin chin crunchy.as u can make a chin chin without egg and still come out fine. Too many eggs in your chin chin dough will make the oil to foam when frying.
3. When frying chin chin don't wait until it is completely brown before u remove from the oil, this will make the chin chin look too brown/ burnt like when completely cooled.
4. Avoid crowding your oil with your chin chin dough when frying as this will result in the chin chin drinking up the oil.
5. To avoid your chin chin from looking burnt within a short time, avoid too much heat/ fire. Always use medium heat as low heat will make your chin chin soggy while too heat will make your chin chin burn.
6. Milk gives your chin chin that heavenly taste that will make u want some more. Always use in moderation.
7. When mixing your chin chin dough always add the water gently to avoid adding too much water to the dough, as this will make the chin chin drinking up the oil.
8. Adding little corn flour to ur chin chin gives it that unique taste and crunchiness. If u don't have a recipe with corn flour stick to the one u are good at .
9. If your dough is too watery or with insufficient margarine/ butter avoid jam packing them in a tray before frying to avoid them sticking together and making your chin chin a mess. Always fry while cutting, if u must cut down sprinkle bit of flour over the cut dough to avoid them from sticking together. U can always sprinkle bit of flour or corn flour on ur work surface before rolling the dough, this helps a lot.

HOW TO MAKE DOUGHNUTS
RECIPES
* 3 cups of all purpose flour
* 4 tablespoon of sugar
* 1 tablespoon of salt
* 1 tablespoon of instant yeast
* 1 egg
* 2 tablespoon of butter
* 1 cup of warm liquid milk
* Vegetable oil
PROCEDURES
* In a mixing bowl, combine flour, sugar, salt, yeast and whisk. Beat the egg into the bowl and mix using a wooden spoon. Add the milk the milk, mix together to form a dough. If the dough is too soft, add some flour and mix thoroughly. Add the butter and mix properly.
* Transfer to a floured surface and knead dough until it's stretchy. Transfer the kneaded dough to a greased bowl, cover and allow it rise until it doubles in size.
* Once the dough is risen, knock the dough to remove some air bubbles. Place it on a floured surface and roll to a flat dough using a rolling spin.
* Using a doughnut cutter, place it on the flat dough. Repeat the process until you're done. (You can substitute a doughnut cutter for any clean object with a round surface/shape.) Cover the dough and let it rise for another 30mins.
* Heat the oil and deep fry until it's golden brown.

MOI-MOI RECIPE

Ingredients:
Beans (white)
Fresh Chilli Pepper
Spring Onions (now in season 😋)
Fresh Fish
Crayfish (grounded)
Bouillon Cubes (I used Gino Max & Knorr chicken)
Sardine
Dried Garlic (Grind together with the seasoning cubes)
Salt to taste
Leftover goatmeat stew

Procedure:
Remove dirt and stone from beans, soak for some minute.

Wash and peel back, change the water from time to time.

Separate the chafe from the beans, wash your Fresh Chilli Pepper , Slice Onions and blend with washed beans.

Pour paste into a bowl and add leftover goat meat stew, seasoning cubes mixture, sardine, salt to taste, grounded crayfish, deboned boiled fish and turn very well.

Grease your tin plate, mug, moimoi pouch with oil in it, if you're using one and pour in your beans puree then cover.

Place purèe in the pot of already boiled water, cover and cooked for 40-45mins. Check to make sure it to your taste, bring down and serve hot . You can choose to use tin, leaf or nylon.
ENJOY with pap, bread, rice or garrri.

OIL-BASED CHIN CHIN WITHOUT BAKING POWDER

INGREDIENTS:

500g of flour
100g of sugar(½ cup).

1 full tbs of milk flavour powder.

50g of veg. oil ⅓ cup.

1 cup of coconut milk or water (200mls).

¼ tsp of nutmeg.

¼ tsp of cinnamon.

¼ tsp of liquid flavour.

⅛ tsp of salt.

PROCEDURES

Sieve your flour in a large bowl, and add all your dry ingredients.

Make a small space at the centre of the flour and pour in your oil.
Mix a bit and add your coconut milk or water little by little to form a dough.

Allow dough to rest for 30mins.
Roll out with your rolling pin and cut into cubes or desired shapes.

Preheat your oil and fry till golden brown.

Strawberry Shortcake Cheesecake Bars
Ingredients
Cookie Crust
20 Strawberry Shortcake Oreo Cookies
3 Tbsp unsalted butter, melted
Strawberry Cheesecake Filling
12 large strawberries
16 oz. cream cheese, softened
1/2 cup granulated sugar
2 Tbsp all-purpose flour
1/4 tsp salt
1 tsp vanilla extract
2 large eggs
12 Strawberry Shortcake Oreo Cookies, divided
Instructions
Cookie Crust
Pre-heat oven to 325 degrees and line an 8-inch square baking pan with aluminum foil so foil is overhanging on two sides. Lightly coat with cooking spray.
Put Oreo Cookies in a food processor and blend until they turn into crumbs. Pour in melted butter and pulse a few times until well blended.
Put cookie mixture into baking pan and press down into even layer on bottom of pan.
Bake for 10 minutes and then remove from oven. Keep oven heated at 325 degrees.
Strawberry Cheesecake Filling and Assembly
Place strawberries in a blender or food processor and process until strawberries are pureed. You should have about ¾ cup of strawberry puree (it's OK if it's a little bit less).
In the bowl of a stand mixer fitted with paddle attachment or in a large bowl with a hand mixer, beat cream cheese on medium speed for about 1 minute, until fluffy.
Add sugar, flour, salt and vanilla and beat until mixture is smooth.
Add eggs, one at a time, beating after each addition until smooth. Mix in strawberry puree.
Pour batter over crust. Crumble about 8 Strawberry Shortcake Oreo Cookies and sprinkle them over the top of the cheesecake filling.
Bake for about 35-40 minutes at 325 degrees, until edges are turning golden and filling is set, but still a little jiggly in the middle.
Remove pan from oven and let cool completely before placing in fridge for at least two hours.
Use foil overhang to take bars out of pan. Remove foil from bottom and set on cutting board. Crumble remaining four Oreo Cookies and top cheesecake with them before slicing into squares and serving.

HOW TO COOK PORRIDGE YAM WITH UGBA (OIL BEAN)
INGREDIENTS
* Yam
* Palm oil
* Ugba (oil bean)
* Scotch bonnet pepper
* Onions
* Seasoning cubes
* Crayfish (blended)
* Cow skin
* Pumpkin leaves or scent leaves
PREPARATIONS
* Roughly blend the pepper and onions together then set aside.
* Cook the cowskin until it's tender and cut into tiny bits.
* Wash and slice the pumpkin or scent leave which ever you are using into tiny bits and set aside.
* Peel the yam and wash until the water runs clear. Transfer into the pot, add some water, salt and cook until it 50% done/soft.
* Add the Palm oil, roughly blended pepper and onions, some chopped onions, ugba and let it simmer for a minute. Add the blended crayfish, seasoning cubes, cooked cowskin, stir and allow to cook until the it's 95% done. Add the leaves, stir properly and let it cook for a minute.
