World jollof day
In celebration of world jollof day. Let me gift you guys a quick recipe.
Rice 2 Derica
Onions 1 big bulb
Ginger 1 finger
Garlic a tiny piece
Curry powder. 1 tablespoon
Thyme 1 teaspoon
Bay leaves 5
Tomato Paste 4 sachets
Pepper mix ( Tomatoes, Rodo and Tatashe)
6 seasoning cubes
Meat stock
Salt 1 leveled tablespoon ( very important)
Vegetable Oil 4 cooking spoons
Margarine 1 table spoon
Wash and Drain your rice in a sieve
Chop the onions and blend the ginger and garlic
Heat up the oil and melt in the butter
Add the onions, ginger and garlic to the oil
Followed by the curry powder, thyme and bay leaves
Then add the tomato paste and allow to fry a little
Next goes in the pepper mix
While it is frying add the seasoning cubes and salt
Once the pepper is fried add the rice and stir till everything blends.
Cover and allow to simmer for few seconds
Then add the meat stock and allow the rice to absorb it all
You can then add water to the level of the rice
Cover with a foil before covering the pot
Leave to cook on medium heat for 10 - 15 minutes before confirming if it's completely cooked.
You can serve with grilled chicken, beef or goatmeat.
