HOW TO MAKE VEGETABLE SAUCE

INGREDIENTS
* Tomatoes
* Red bell pepper
* Scotch bonnet pepper
* Onion
* Fish
* Garlic powder
* Salt
* Seasoning cubes
* Ground pepper
* Vegetable oil
* Pumpkin(or any vegetable of your choice).

PREPARATIONS

* Wash and slice the fish into desired sizes. Season the fish using garlic powder, salt, grated onions, grounded pepper, stir so that the ingredients can touch all sides of the fish. Let it marinade for 30mins. Fry, de-bone when cooled and cut into smaller sizes.

* Roughly blend the tomatoes, red bell peppers, scotch bonnet pepper and onion and set aside.

* Wash the vegetables, slice and set aside.

* Set a pot on a medium heat, add some oil, pour the roughly blended tomatoes paste, let it cook and keep stirring until the water dries off.

* Add salt, seasoning cubes, garlic powder and stir. Add the de-boned fish and stir.

* Add the vegetables allow it to simmer for 2min. Stir and off the heat.

DO'S AND DONT'S OF BUTTERCREAM

1. Don't refrigerate your buttercream cakes for too long It will sweat

2. Don't use mixer to mix ur icing sugar and butter. It will incorporate air into it thereby causing air bubbles. If u must, do so at very low speed and stop once it is mixed. Do not over beat.

3. Your buttercream should not be too light else It will fade off and Don't allow it to be too thick It will pull your cakes off.

4. Buttercream works better/perfect in cool atmosphere

5. Do not allow your buttercream to dry before combing else your frosting will be rough.

6. It's best to work with shortening than margarine. Though it can be mixed with the ratio of shortening higher than butter. This is to allow u have a 'dried' buttercream.

7. Secret to sharp edge and smooth buttercream is on number 6

9. Buttercream is alot easier than Fondant but not cheaper

10. Getting a brighter colour is sure if you adhere to number 6

How to make crunchy egg rolls:

1. Put the eggs in the pot, add some water, and some salt. The salt would allow for easy removal of the shell after they’re properly cooked. Sieve all your dry ingredients in a mixing bowl: flour, nutmeg, sugar, salt, and baking powder. Give them a good stir and make sure they are well combined.

2.Add margarine and mix very well until it gives a crumbly texture. Add your eggs one after the other and mix them thoroughly

3. Add the milk in absence of milk add water bit by bit to form a dough. The dough should not be too soft or too add to work on. Cover and allow to rest between 20-30 minutes.

4. Put the dough in your palm. Put an egg in the middle of the dough and wrap in the dough. mold it very well in your palms, to be sure it’s well sealed. Start dropping the wrapped egg rolls in the oil one after the other,

5. Fry between 6-8 minutes. Flip from side to side, when both sides are well cooked and golden brown, the egg rolls are ready to be consume with chill drink

Baking Soda vs. Baking Powder
Learn the differences between Baking Soda and Baking Powder.
How they work and affect your baking. Be a better baker by learning these fundamentals!

What are they?

Baking powder and baking soda are both chemical leaveners that work to create light textures in baked pastries .
Although baking powder actually contains baking soda, the two leaveners are very different.

Baking Soda
Baking soda is a natural alkaline ingredient activated by liquid and acid.
Naturally acidic ingredients that will activate baking soda:
Like -Buttermilk, Sour cream,Yogurt,Lemon juice,Honey,Cocoa powder, Brown sugar etc.
There must be some acidic ingredient in the recipe for baking soda to function. Baking soda begins to leaven as soon as it touches liquid so if you wait too long before baking you may notice a decrease in leavening effect. If you use too much baking soda, you may taste an unpleasant metallic flavor in your food. Baking soda also helps by elevating pH levels. Your baking soda must be fresh to work properly, However, baking soda can loose its effectiveness even before the expiration date. So as soon you open it, don't store it for too long.

Test for freshness
Placing 1 teaspoon of baking soda in a bowl and pour 1 teaspoon of vinegar on top. If the baking soda immediately bubbles , it is fresh. If nothing happens, discard it & buy a new one.

Baking Powder
Baking powder is a combination of baking soda, acid, and cornstarch. Most baking powder available in the market today are double acting & single acting. Unlike baking soda, baking powder doesn’t require an acid to activate, only moisture.

Test for freshness
Scoop 1 teaspoon of baking powder into a 1 cup of very hot water . If it bubbles up, the baking powder is fresh. If nothing happens, discard it.

Their Strength
It’s important to understand that baking soda is four times stronger than baking powder. This means 1 teaspoon of baking powder will raise a cup of flour, whereas only a ΒΌ teaspo
