Commercial Chinchin recipe
No egg, baking powder and milk
Soft, sweet and chewy
Ingredients
Flour - Biggest tin tomato size fill to the brim
Sugar - 1½cups
Margarine - 1½ sachets
Nutmeg - 1 small seed
Milk powder flavour - 50 naira sachet
Industrial milk flavour - 1 or 2 caps
Water - 3 cups using measuring cup
Method
1. Into a mixing bowl, add sugar, milk powder flavour, industrial milk flavour and water. Mix together till no lump of sugar is found. Set aside
2. Into another mixing bowl, add flour, nutmeg. Mix together till well combined
3. Add margarine into the flour mixture and mix till it looks crumbly
4. Then make a well into the center of the flour mixture and add the sugar water mixture, then use cut and fold method to mix to form a dough
5. Cover to rest for 15 mins
6. Then cut into cubes and fry till golden brown
Note: Do not knead to avoid frying a tough dough
Do not double this recipe for easy mixing and to get the right texture.
Tips: Cut into big cubes (not too big) to be able to make more profit
Fry with smallest pot to economize your oil. I measured 1 big Eva bottle of oil to make two of this recipe and I still have about a half bottle left
If you want it crunchy use 1 sachet of margarine
