Good afternoon my people. It's been quite a long time, anyways it's not my fault una boy dey school. But thank God we are done for the year.

It's just a few weeks to Christmas, that period you have to bake nice cakes for your clients and your family and I don't think you will like to serve them the same cake recipe you normally serve. But before that have you soaked your fruit? If you haven't soaked it don't worry about it I got your back with a recipe that doesn't call for soaking of fruit.

I made a post yesterday saying that milk is not compulsory in vanilla cakes,some people agreed to the fact while others did not, some even went to the extent of coming to my DM to debate on the topic. Though I found it interesting I also used that opportunity to teach them more on cakes baked with milk, which atnthe end some of them decided to buy my recipe.

Now listen, you that were not in my DM,people say that milk enhances the taste and moisture of their cake that might be true( I didn't say its not true. But to me what makes a cake come out yummy and moist is following the correct baking process and recipe. Have you baked a cake and after 3days it got spilt, then stop adding milk to your cakes at least your vanilla cake is meant to last 5days outside the fridge and 7days in the fridge. Purchase good recipe and upgrade your baking. You can send a DM if you need mine.

Celebrate my 200 followers I have also decided to add this easy but rich cake recipe, very moist, soft and fluffy.
This is an oil based vanilla cake recipe.
Ingredients

*3 cups flour
*1/2cup oil
*4eggs
*3tsp baking powder
*One and half cup sugar
*1/2tsp of vanilla flavor
*1/2tsp of milk emulsion
*1/4cup milk.
Method
*Mix all the liquid ingredients until well combine
*Sift in your dry ingredients continue mixing until very creamy
**Grease and line your pan with parchment paper then bake.

I have decided to take a break on all of my online courses, reason being that I noticed that what most bakers need is a physical class and not online class.
So, Lady Chi bought my Classic Vanilla cake recipe which at the initial stage she was happy she did. Like every other student she came back q week after complaining that the recipe I gave her didn't work out for her, I was surprised because since I developed that recipe and started selling it, it has been a boom and a life saver recipe.
Long story cut short, I asked her some certain questions lo and behold I found out that what this lady needed was not just a new recipe but a physical beginner class. So because of that I have decided to admit 30 person into our baking school, this was meant to be a free physical class but due to some unforseen circumstances I have decided to train 30 person with just 10k for the space of 1month.
Note: Practical materials will come from the students and students must be within Onitsha.

Mixed Spices and flavour

One of my pet peeves about Christmas baking or should I say full recipes is that people add too many spices. So much that everything tastes like cinnamon, pumpkin spice or ginger bread spice. I think adding spices is great if you can keep the proportion to a minimum. The spices are there to enhance flavours. So next time you follow a recipe with spices, perhaps check to see if you want them all or reduce the quantity a bit.
*Mixed Spices is generally made with cinnamon,ground ginger,ground cloves,all spices and ground nutmeg.
*And if you cannot get mixed spice add 1/8tsp each of cinnamon,ground ginger,ground cloves and all spices.
*Don't like spices in cakes? Add 1/8tsp of cinnamon,1tsp of vanilla or 1/2tsp almond extract - you can add a three or just some plain vanilla extract.

Baking a fruit cake is a little different than regular cakes. In this post you'll find tips for baking perfect fruit cake, for storing your fruit cake whether you use alcohol or fruit juice.
I know Christmas is around the corner so everyone has started with the fruit cake preparations. To those of that have been doing fruit cake for years, it's just a regular cake. For those that are just starting out it's quite unnerving when people tell you fruit cake is different. How is it different? Why is it different and what do I need to do differently?

*Well it has so much more than just four eggs and butter. The real difference is the addition of all those gorgeous fruits.

*If you do not follow the right process for storing fruit cake you could end up with a moldy fruit cake, which is not pleasant.
Here I compiled a few tips that I think are really important to know when baking fruit cakes.

*Always soak the fruit, at least over night if not longer,it will soften and make the cake moist. Soaking of the fruits means that the fruit will not absorb any more moisture from the cake batter and will coo in its own juices. This results in a very flavourful moist cake.
*Dust the fruit in flour before you add to your batter so they will not sink to the bottom of the pan. If the fruit is wey drain excess liquid and dust with flour before adding to the batter.
*You can add liquid I which the fruit was soaked to the batter separately.
*Fill the pan 2/3 full not more. Fruit cake do not rise when baking because they do not have too many leavening agents or lots of eggs. But a 2/3full pan is always good for even baking in cakes.
*Fruit cakes cooks longer and slow. Which is why lining the baking pans on all sides is very important. This will prevent the outside from over cooking.
*Ensure oven temperature is low so the batter will cook evenly without drying out the fruit.
*Steam baking is also another important tip for a perfect moist fruitcake.

Do you experience burnt cakes and hollowed cakes in the middle?

Here is why it happens.
1:When a cake is being baked in an oven,stove, gas cooker etc, be it whatever method make sure you do not open the oven to have a peep at what is going on frequently,as it can lead to the cake sinking or hollowing in the middle.
2: Baking a cake on a high heat or in a very heated oven,can cause a cake to drop in the middle.
3:Excess butter or margarine in a cake batter can cause the cake to sink in the middle and the side to fold in together. So know your measurement.
How to stop your cake from burning.

Several things can go wrong when you are baking a cake. One of the most common problems is when the outside burns. Often times, even though the exterior of the cake has burnt, the batter on the side is still not cooked.
Steps to take
Use the right recipe
Bake with the accurate temperature
Don't open your oven frequently until after 30mins of baking.
When baking use steaming method this helps to reduce can burns and also moistens the cake.

Plain brown cake

250g flour
200g sugar
4eggs
250g margarine
1tsp baking powder
1tbsp black treacle
1tsp nutmeg
1/2tbsp browning
2tbsp flavour
1tsp cocoa.
