How to Make Sure Your Cake Will Always Rise to Perfection👩🏻🍳
To prevent a cake from sinking (or rising then deflating after cooling), it's important to learn what makes a cake rise. Read through these four key factors for preparing and baking cakes correctly and you'll never have to wonder why your cake didn't rise again.
1. Leavening Agents
Bread, cakes, cookies, and pretty much all baked goods require a leavening agent. These are the key ingredients that make a cake rise. There are two types of leavening agents, chemical (baking soda and baking powder) and biological (yeast). Since we're talking cake and not yeast bread here, we'll focus on chemical leavening—the reaction of baking soda or baking powder with the liquids in the batter releases carbon dioxide, which forms air bubbles to help your cakes become light and airy.
2. Creaming Your Butter Mixture
"Creaming" is the part of the recipe where you beat the butter (or shortening) and sugar. When creaming two or more ingredients, usually with a hand mixer, the result should be a smooth mixture with no separation. Creaming incorporates air that helps your cake rise and should not be cut short if you want a fine, even cake texture. Follow the timings for beating in the recipe closely and measure your ingredients correctly.
3. Introduction of Eggs into the Batter
Eggs alone can help make desserts light and fluffy without requiring leavening agents. Make sure to follow the timings in the recipe when beating in eggs and whether you need to have your eggs at room temperature first. Too many eggs in the batter can result in a dense or compact cake.
4. Oven Temperature
The heat of the oven can cause the baking powder to react further and cause more air bubbles while setting the cake's structure. Using the proper oven temperature is important to allow the cake to rise before the structure sets. If the oven is too hot, the cake will set too fast before the air bubbles have formed. If the oven is not hot enough, the cake will rise too much, then fall in the center before it is set.

Procedures
Cream butter or margarine for (3min) or untill fluffy
Add icing sugar mix until well combine. (But don't overmix)
Add flavor and milk mix until combine.

Here are the two different types of flour mixture.
DOUGH
Is a thick mixture that requires rolling or kneading.e.g yeast bread and pastries.
BATTER
Is a thin mixture that is pourable in consistency e.g cake and pancakes
Why should you sieve or sift your flour while baking??
Over time I have heard some Bakers say its not really necessary to sieve flour.
I totally disagree with these set of Baker's.
I believe that first major thing every good baker should do is to sift their flour before use.
Sifted flour, which is much lighter than unsifted flour, is easier to mix it into other ingredients when forming a cake batter or making dough.
And also for instance when flour is sifted with other dry ingredients such as cocoa powder, baking powder, baking soda,etc this help to combine them evenly before they are mixed with other ingredients.
You sift your flour to wear-off it's heaviness as in to make it light.
We also sift out flour to extract unwanted particles from the flour.
As for me I sift my flour 2-3 times just to make the flour very light and by so doing it makes me produce very fluffy and light cakes
So if you haven't been doing this..........start practicing it.
Why isn't your cake fluffy and moist...
There are a few reasons why your cake may come out drier than expected.
First, it's important that you bring the butter,egg,and milk to a room temperature before beginning the recipe.
If they are too cold,the batter won't form an emulsion and your cake won't be light and fluffy.
Then make sure you don't overmix the batter, follow the recipe instructions for mixing time.
Finally an overbaked cake will be dry so check it early.
If your oven tends to run hot, consider using am oven thermometer to better monitor all your baked goods.
