A popular dish in Anambra State

Recipe
1 full chicken
2 cow brain
2 cup palm oil
2 bulbs of onions
10 seeds Roasted Ehuru (Calabash nutmeg)
Fresh (Ginger, garlic, tumeric)
Scotch bonnet
Utazi (Gangronema latifolium)
Ogiri igbo (African Mesquite)
Salt
Beef seasoning
Corn flour (optional)

Direction
1. Place the chopped chicken plus the cow brain into the pot and season appropriate with salt, beef Stock, blend of onions +ginger + garlic + turmeric

2. Simmer on low heat n then increase the heat, while stirring appropriately.

3. Remove the brains and place in a mortar and pound out your stress,
Add Ogiri igbo, ground ehuru, stock cubes, Cameroon pepper, and keep grinding till smooth

4. Add palm oil while stiring the mixture in the mortar till its colorful n emulsified.

5. Proceed to add it to the chixken on the pot with little or no water

6. Stir the pot thoroughly, taste for seasoning

7. If it's a bit loose or watery, at some corn flour slurry.

8. Serve and garnish with onion rings and julienne sliced utazi leaves

HOW TO MAKE WATER LEAF SOUP
INGREDIENTS
* Goat meat (or any protein of you choice)
* Cow tripes
* Water leaves
* Onion (chopped)
* Pepper (blended)
* Crayfish (grounded)
* Locust beans (okpei)
* Palm nut juice or palm oil
* Seasoning cube
* Salt
* Achi ( thickener )
PREPARATIONS
* Wash the water leaves trice, using salt and water to remove sand and dirts. There after, wash the water leaves same way you wash your bitter leaves by rubbing your hands through the leaf. This helps to remove the slime nature of the leave. Once you are done, rinse and transfer it to a sieve then set aside.
* Season the goat meats and cow tripe with salt, onion, pepper and seasoning cubes and let it cook for 15min without water. After 15min add some water and stir. Allow it to cook until the meat is soft.
* Add the Palm nut juice or palm oil into the pot and allow it cook for 5min.
* Add the crayfish, locust beans, and achi. Stir and taste for salt and seasoning cubes and add if necessary. Stir and allow it to boil for another 5min.
* Add the washed water leaves and give it a good stir and allow it to simmer for 4min.

PARTY NIGERIA DOUGHNUT

Number of doughnut: 500 pieces
Quantity of dough per doughnut: 60g

Ingredients
Flour 7.2kg
Sugar 780g
Yeast 16 teaspoons
Butter 350g
Salt 9 teaspoons
Milk 15 tablespoons
Vanilla flavor 8 teaspoons
Milk flavor 6 teaspoons
Egg 15 pieces

Procedure
Mixall dry ingredients together in a sizeable bowl.

Mix milk/lukewarm water, yeast, egg, melted butter, and vanilla flavor together.
Whisk the content very well to mix properly

Add to your flour mixture gradually the water mixture. Mix with hand very well until sticky.

Transfer to floured work surface and knead dough for 10 minutes adding little flour being careful not to add too much. Dough should be soft.

Grease a container and place the dough in it; brush oil on dough and cover for about 1 hour or until double in size

divied dough into same sizes on a scale of 60g. Dust the surface with four, form each Doug into ball place on work surface allowing them to rest for about 15 minutes.

Using a scraper, press dough ball down and cut center using a piping tip.

Remove excess dough. Place them in dusted tray and cover for 5 minutes.

Start frying in batch making sure the fire isn't too high to allow the inside fry well.

HOW TO MAKE CHIN CHIN (FOUR DIFFERENT FLAVOURS)

1. VANILLA CHINCHIN

4 cups or 500g all purpose flour
1/2 cup or 100g sugar
1/2 teaspoon baking powder
1 large egg
180ml or 3/4 cup fresh milk (you can also evaporated milk or powdered milk)
8 tablespoons or 1/2 cup melted butter or margarine
1 teaspoon vanilla extract
1/2 teaspoon nutmeg or cinnamon
Pinch of salt
Vegetable oil for frying

Sift the flour, baking powder, nutmeg or cinnamon, sugar and salt into a bowl.

Add the butter or margarine to the dry ingredients and mix until properly combined

Add the vanilla extract to the the milk and mix well, then add the mixture to flour mixture

Also add the egg to the flour mixture and mix everything together until you form a dough

Knead the dough for about 3 minutes till smooth and not sticky

With a rolling pin, roll into a thin sheet on a floured surface and cut to your desired shape and size

Fry in vegetable oil until golden brown.

Drain excess oil with a kitchen towel

Let cool and enjoy

2. CHOCO CHINCHIN

Same as above but add 100g of Milo or ovaltine to the dry ingredients before, adding the wet ingredients.
NOTE
-If the dough is too strong, add a bit of
water.
-You may or may not omit the vanilla
essence and the nutmeg/cinnamon.
-You can also use cocoa powder but
you have to increase the amount of
sugar used in the vanilla recipe.

3. COCONUT CHINCHIN

Same as vanilla chinchin, but with the coconut chinchin, you would need a medium sized coconut.
-Break the coconut and pry out the
flesh.
-Blend the coconut flesh with about
150ml of water.
-Sieve out the milk and use in place of
the 180ml of milk used in the vanilla
chinchin recipe.


4. BEETROOT CHINCHIN

Same as the vanilla chinchin, but for
this, you would need a medium sized
beetroot.
-Cook the beetroot, blend with as little
water as possible and sieve out the

Ingredients Needed To Make Garden Egg Sauce

1. Garden egg
2. Palm oil or groundnut oil
3. Onions
4. Pepper (tatashe, rodo)
5. Fish
6. Maggi
7. Salt
8. Crayfish.

Steps On How To Make Garden Egg Sauce

1. Rinse your garden egg sauce properly
2. Remove the stalk in your garden egg
3. Blend your clean garden egg with a blender, pound with a mortar and pestle or boil till it is soft and mesh with a sieve
4. Cut onions into smaller sizes and split into 2, one to be pounded as explained in step 5 and the second to be fried as explained in step 8
5. Pound pepper and onions in a mortar until it is smooth
6. Pour the blended garden egg into a pot and cook till water dries up from it (you can skip this step if you pounded the garden egg in a mortar, only do this is you blended it)
7. Pour your palm oil or groundnut oil into another pot (do not let the oil get too hot, low heat is required)
8. Pour in your sliced onions onion and fry for about 2 minutes
9. Pour in the boiled garden egg that was set aside in step 7 and stir for about 2 minutes
10. Cover the pot to allow it to cook, open and stir occasionally
11. After the garden egg has started separating from the oil, pour in your blended pepper and iru (locust beans)
12. Also, add maggi, salt and smoked fish
13. Then cover and leave to simmer for few mins, then your garden egg sauce is ready.

Food You Can Eat Garden Egg Sauce With Are:

Boiled yam
Boiled plantain
Eko or corn jellos
White rice
Boiled potatoes.

* Green bell pepper (diced)
* Carrots (diced)
* Green peas
* Green beans (diced)
* Spring onion (diced)
* Onion (chopped)
* Sweet maize
* Liver
* Salt
* Grounded pepper
* Seasoning cubes
* Curry powder
* Thyme
* Coconut/Vegetable oil
PREPARATIONS
* Wash and season the chicken, liver with some seasoning cubes, salt, curry powder, grounded pepper, thyme, blended ginger, garlic and onion. Cook for 10min, add some water and cook until it's tender. Fry and cut the liver into smaller sizes.
* Wash the rice until the water runs clear. Transfer the rice into a pot, add the meat stock and coconut milk. Adjust with salt and seasoning cubes and let it cook until it's done.
* In a pan, heat up some coconut oil or Vegetable oil, add the chopped onions, fry for about a min. Add the diced carrots and fry for 2mins. Add the bell peppers, green beans, green peas, sweet corn, cut liver. Add some salt and seasoning cubes, stir and fry for 3mins.
* Properly combine the rice together with the fried Vegetables. Garnish with some spring onion and serve

* 1cup of warm liquid milk
* 2 tablespoons of sugar
* 1 egg
* 2 tablespoons of instant yeast
* 3½ cup of all purpose flour
* ½ tablespoon of salt
* 3 tablespoons of butter
FILLINGS
* Chicken
* Onion (diced)
* Red bell pepper (diced)
* Chilli pepper
* Vegetable oil
* Seasoning cubes
* Salt
* Grounded pepper
* Garlic powder
PROCEDURES
* In a mixing bowl, coming the milk, sugar, egg, instant yeast and whisk. Add the salt, all purpose flour and mix using a spatula to form a dough. Add the butter, using your hands, mix the butter together with the dough.
* Flour a clean surface and knead dough.Transfer the dough into a greased bowl and let it rise until it doubles in size.
* Season the chicken using salt, seasoning cubes, onions, garlic powder and grounded pepper and allow to cook until it's done. Cut into smaller sizes when cooled.
* Pour some vegetable oil into a pan, add the onion, red bell pepper, seasoning cubes, salt, chilli pepper, garlic powder, chicken and stir. Allow it simmer for 1min as you keep stirring.
* Cut the dough into smaller sizes and roll them into a flat dough.
* Add the fillings into the dough and seal all sides to form a ball. Repeat this process untill all dough have been exhausted.
* Place some parchment paper on the baking pan and transfer the dough into it. Cover and let it rise for 25min
* Brush some egg wash ( mixture of egg+milk or water) on the surface of the dough and bake in a preheated oven of 175°c for 20-22mins

600g Flour
100g Sugar
200g Margarine
1tsp Nutmeg
100g milk flavor
1/2 two Salt
1/4 tsp Cinnamon powder
1/2 tsp Baking powder
1 cup Water
Oil for frying

PROCEDURE

Sieve flour in a bowl
Add salt, baking powder, flavor, cinnamon, nutmeg, sugar and margarine
Mix until it looks like breadcrumbs
Make a hole in the middle
Add water
Mix until you get a smooth dough
Flatten out and cut into desired shape
Deep fry till golden brown.

INGREDIENT
* Washed bitter leaf
* Uziza leaf
* Scent leaf
* Palm oil ( or palm fruit juice )
* Goat meat
* Mackerel fish
* Dry fish
* Onions
* Scotch bonnet pepper
* Crayfish
* Dried prawn
* Grounded Orioma seed
* Seasoning cube
* Salt
PREPARATIONS
* Wash and blend the bitter leaves, scent leaves, uziza leaves, onion, pepper crayfish together and set aside.
* Wash the goat meat, transfer it into a pot, steam using salt, chopped onions, seasoning cubes and cook for 15min. Add some water after 15mins and cook until it's 80% done.
* Wash and add the dried fish, prawn, mackerel fish. Add the orioma seed, palm oil or palm fruit juice and gently stir. Allow it boil for 2min then taste for salt, seasoning cubes and add if necessary.
* Add the blended leaves and gently stir to avoid breaking the fish. Allow to boil for awhile to thicken.
This is one of the Edo favorite particularly the Esan.

HOW TO MAKE OGBONO SOUP

Assorted meat and fish: goat meat, kpomo, stock fish, and dried fish
Ogbono seeds
Palm oil
Ground crayfish
Medium onion, sliced
Seasoning cubes (Maggi/Knorr)
Ugu (pumpkin) leaves. Alternative you can use spinach or bitterleaf
Salt and pepper to taste (hot pepper)

Tip: Ogbono soup should be thickish and draws, hence try not to cook ogbono soup with too much water – usually the little stock/water from cooked meat.

Preparation Method:
Get the major ingredients ready. Grind the Ogbono seeds with a dry mill. Pick and cut the pumpkin leaves, and set aside. Defrost chopped spinach if that is what you are using. Grind crayfish and pepper, and set aside.

Wash and clean the meat thoroughly. Cook with sliced onions and seasoning cubes to taste. Cook on low heat – cover pot and allow to it simmer for about 30 minutes. This allows the meat to cook tender and soft, but also helps to release its natural juices.

After 20 minutes, add the stock fish and dried fish. Add the hot pepper and ground crayfish, and continue to cook for the next 10 minutes. Add palm oil, cook for another 5 minutes to allow the palm oil melt and combine well with cooking contents.

Put heat to very low and stir-in ogbono gradually, stir continuously – this allows ogbono to dissolve nicely, and eliminates forming lumps. You will notice the Ogbono start to thicken and draw – keep stirring till the ogbono has completely absorbed the meat stock.
Combine thoroughly and leave to cook for about 15 minutes on medium heat.

Taste for seasoning, salt and pepper – adjust if necessary. Stir occasionally, scraping the ogbono that sticks to the base of the pot.

Finally, add the pumpkin leaves (or any of the alternative leaves you using). Stir very well, turn the heat low and allow to cook for about 4 minutes so the pumpkin will not over cook.

SOYA BEANS DRINK

Ingredients:

1.SOYA BEANS
2.Water
3.Sugar or honey
4.Dubino (date)
5.Ginger
6.Powder milk (optional)I love adding it after chilling,

PROCEDURE

STEP1:
soak the soyabean in the water, over night, in order to make it soft and easy to wash of skin,

Step2:
Remove the outer Skin from the soyabean seed. And wash it thoroughly to avoid dirty.like the way u wash of your beans

Step3;
Blend together the soyabean seed, dubino (date) and ginger . add water while blending to make it blend smoothly.

Step4:
After blending it , you can add more water in it and mix very well.
Then separate the chaf from the soya milk by using sieve net .

Step5:
Sieve it for 2 to 3 times, then pour the soya milk into a clean pot,,
When it starts boiling reduce the heat and continuously stirring it to avoid spilling over the pot .
On a low heat stir for 25 to 30mins and put it down add the sugar or honey

Note
Remember dubino (date) contains natural sugar itself, so know how you put sugar or honey to avoid sugary soya milk.

After mixing everything together keep
in the freezer or fridge,after chilling it,you can add your powder milk if u like.

Egg roll.

Ingredients
2 Cups Flour
1 Egg
1 Tsp Baking powder
1/4 Tsp Salt
1/2 Tsp Nutmeg
2 Tbsp Margarine
8-9 Tbsp Water
5 Eggs Boiled
2 Tbsp Sugar

Instructions
-In a large bowl, mix together the Flour, Baking powder, Salt, Sugar and Nutmeg

-Use your fingers to blend the Margarine into the flour until it’s crumbly.

-Add the beaten egg and mix together. The dough should look dry at this point.

-Begin to introduce the water a little at a time and work the dough till dough is soft and sticky but still workable.

-work the dough for about a minute then cover it and let it rest for about 15 to 20 minutes.
-Work the dough again for a couple of seconds to a minute and divide it into 5.

-Tightly wrap each of the dough around each Egg.

-Fry on a medium heat turning over and over again until it’s golden brown.

-Serve your Egg Roll hot or warm. Enjoy!

Please note:
'Do not wrap all the eggs at once except you are ready to fry them right away. Only wrap as you fry. If you do otherwise, the dough around the egg will continue to rise. This will cause the dough to lose its snug fit around the egg by the time you fry.

-The Egg Rolls should be fried on medium heat. Frying on a high heat will prevent the Egg Roll from cooking on the inside. Don’t worry the Egg Roll will not get soggy in the Oil as long as the Oil is not cold.

-Use enough Oil to deep fry in other to get the best result.

-You can also bake this if you choose to, but the Egg Roll will not be as soft on the inside as the deep fried

Puff puff.

Ingredients.
For about 25 balls of Puff Puff, the size in the photo above, you will need:

2 cups (250g) of Plain Flour
2 teaspoons of yeast (the one used in baking bread)
½ teaspoon ground nutmeg
½ cup granulated sugar (or to your taste)
3 pinches of salt
Lukewarm water (for mixing)
Vegetable Oil (for frying)

Directions:
-Mix salt, sugar, water, nutmeg and yeast. Set aside for 5 minutes.
-Add flour and mix.
-Let the mixture rise for approximately 1- 2 hours
-In a large, sauce pan, pour vegetable oil into a pot, until it is at least 3 inches (or about 5 centimeters) high (too little will result in flatter balls) and place on low heat.
-Test to make sure the oil is hot enough by putting a ‘drop’ of batter into the oil. If it is not hot enough, the batter will stay at the bottom of the pot rather than rising to the top.
-Using your hands grab a little bit of mixture at time and drop in the oil.
-When the oil is hot enough, use a spoon to dish up the batter and another spoon or spatula to drop it in the oil, sort of in the shape of a ball.
-Fry for a few minutes until the bottom side is golden brown.
-Turn the ball over and fry for a few more minutes until the other side is golden brown.
-Use a large spoon or something like that to take it out of the oil. I usually place them on napkins right away to soak up some of the excess oil.
-If desired, you can roll the finished product in table sugar or powdered sugar to make it sweeter.
