Let's make groundnut soup. It can be a great substitute for egusi soup too.
500g roasted groundnuts( you can also make do of raw groundnut but you will have to roast it yourself on a pan before using).
One medium-sized onion
Meat of choice.
Smoked fish
Dried fish
Crayfish
Stockfish
Palm Oil
Bitter leaf, scent leaves.
2 tablespoons ground crayfish
2 cubes of knorr
Fresh pepper( according to the spiciness you can tolerate).
Salt.
Preparation:
◾Start by prepping all the ingredients that you will be using to cook and set them aside.
◾ De-bone your fish.
◾Blend your groundnut. (To form a runny paste not too runny though).
◾Blend your pepper, crayfish, onions and water.
◾Start by boiling your meat, and stock fish together with onions, salt and seasoning. Allow the meat to boil in its juice before adding water to finish up the cooking.
◾Remove the meat( You can cook with the meat still in the pot while you add your groundnut and the rest but because this soup needs occasional stirring and can thicken a lot and may burn if not occasionally stirred I like to cook the groundnut first before adding back my proteins) so nothing obstructs me🤪.
◾Put in your blended crayfish and pepper in the meat stock and allow to boil for 2mins.
◾Add the ground groundnuts Reduce the heat to very low and start cooking.
◾Stir every 5 minutes and top up the water if necessary. This mixture burns easily so watch it closely and stir as often as necessary.
◾Cook till clear oil appears on the surface( you know groundnut has its oil). This should take about 15 minutes. Add palm oil and stir very well. ( some people don't add oil to their groundnut soup because it has its oil but I love to add oil for a pop of colour and taste).
◾Add the beef and fish, stir and cook on low heat till it boils. For those who prefer their groundnut soup without vegetables, the soup is ready at this time. But if you prefer with vegetables add your bitter leaf vegetable to it( I love bitter leaf vegetable in my groundnut soup to bring down the sweetness but if you don't mind, scent leaves are another good choice too. Cook for 2 minutes and bring it down. Your soup is ready.
Serve with your choice swallow.
