Hers a quick recipe we can try in the comfort of our homes

HOME MADE TOMATO PASTE

Recipe
Juicy ripe tomatoes

I teaspoon of salt

ยฝ to 1 cup of veg. Oil

Pot

Large sieve

PROCEDURE
โœ“ Use only the ripest, sweetest, most delicious tomatoes you can find

โœ“ Squeeze out and discard the seeds

โœ“ Remove, discard stems and any damaged part from the tomatoes

โœ“ Chop the tomatoes and put them in a large pot

โœ“ Cook the tomatoes over high heat

โœ“ Cook, stir, just until the tomatoes soften about 2 minutes

N.B. The brief cooking helps break the tomatoes down a bit and makes them easier to run through a sieve

โœ“ Add about ยฝ cup o the veg. oil and salt to the tomatoes

โœ“ Run the cooked tomatoes through a sieve would a spatula

N.B. This is to turn the tomatoes to a pulp while removing the skin.

โœ“ Reduce the tomatoes to a paste completely on heat, stir frequently

โœ“ Keep simmering the tomatoes and check on it frequently to stir it as it reduces.

โœ“ Transfer into jars with tight lids

โœ“ You can keep in refrigerator or process the jar in hot-water bath

TO STORE IN REFRIGERATOR
โœ“ Transfer the paste into jars

โœ“ Leave room at the top of each jar to pour oil to protect the paste

โœ“ Cover the lid and store for up to several months.

โœ“ Every time you scoop out of it, make sure the surface is covered with oil.

HOT WATER PROCESS
โœ“ Turn paste into jars, leaving ยฝ inch space at the top

โœ“ Pound the jar on a counter a few times to get air bubbles out.

โœ“ Seal (cover jar) and place in boiling water

โœ“ Make sure the boiling water cover the jar by at least an inch for about 30 minutes

โœ“ Remove and leave to cool at room temperature

โœ“ Store in a cool, dark place (a cupboard is okay)

โœ“ Once opened, store in the fridge and use clean utensils for removing tomato paste from the jar, to reduce the risk of mould developing.

HOMEMADE MAYONNAISE

With only 4 or 5 ingredients that you probably have around the house and 5 minutes of your time, you can make homemade mayonnaise

RECIPE
2 large eggs
2 teaspoon lemon juice (or vinegar)
1 cup of oil (veg. Oil)
Pinch of salt for taste
A teaspoon of sugar

MATERIALS
Whisk
Bowl or blender

PROCEDURE
Break and separate egg white from the yolks. Place the egg yolk in a bowl.

Pour the lemon juice or vinegar into the bowl with the egg yolks, season with salt and add sugar, whisk well

Slowly,few drops at a time, add the oil into the bowl while whisking consistently. Once it has start to thicken, stop pouring and whisk the mayonnaise till the oil has Incorporated.

The mayonnaise should be thick and fluffy.

Your mayonnaise is ready ๐Ÿ˜‹

NOTE:
If it comes out too thick, add water little by little till desired consistency is achieved

Use room temperature eggs

Always add lemon juice first as it helps to break down the protein in the egg yolks so they emulsify better

Start with a very slow stream of oil

Use only fresh squeezed lemon juice.

PLANTAIN EMPANADAS
A yummy delight๐Ÿ˜‹
One thing about the plantain empanada is that you can fill it with anything ( cheese, fish filling, meat/beef filling). You just need ripe plantains. It can be served as appetizer. Best eaten warm & freshly fried with pepper sauce and served with hot or cold cups of beverage.

Ingredients
โœ“. 3 medium sized ripe plantains
โœ“. Salt to taste
โœ“. Water
For the filling:
โœ“. 200g beef or minced meat
โœ“. 1/2 small onion(diced)
โœ“. 1 teaspoon chilli powder
โœ“. 1 seasoning cube
โœ“. Salt to taste
โœ“. 3 cups vegetable oil for deep frying

Procedure
โœ“. You can also grind your meat, if you don't have where to buy minced meat. It is easy if you have a grinder. It also saves stress and money ๐Ÿ’ฐ.
Wash the meat thoroughly with clean water pump, slice off the elastic muscles with a sharp knife. Most times, the grinder cannot grind that part of the meat. Dice the meat into smaller chunks and place in the grinder- Grind

โœ“. Steamed the minced meat in a separate pot for about 10 minutes with a cup of water and salt to taste

โœ“. In a pan, heat up 2 tablespoon vegetable oil for 2 mins. Add the diced onion, steamed meat and chilli powder and stir fry for about 2 minutes

โœ“. Wash & cut the Plantains,into about 3 pieces each. Place in a medium sized pot and add water. Boil for about 15 minutes till soft. Remove the skin from the boiled plantains and mash the plantains with a fork

โœ“. Roll out the mashed plantain with a rolling pin on a flat surface, and cut out circles using a circle cutter. Place about a tablespoon of minced meat in each circle cut out & fold (like meat.pie)

โœ“. Preheat the oven in a pan & drop the plantain empanadas into it, one at a time, making sure you do not crowd the pan.
Fry until golden brown

โœ“. Remove the oil and drain. Serve as a snack.

Add the filling a little bit close to the edge and don't over fill

Tightly roll the wrapper around the filling, making sure you tuck in the filling

Fold both edges in and roll it up tightly

Rub the paste over the edge and be generous with it so it close up tight, and doesn't burst open while frying

Heat oil up to 350- 375 ยฐF / or medium heat

Fry till it's golden brown

Once the spring rolls are golden brown, take them out of the oil, drain and allow to cool...

I deserved to be flogged and I know that..
I've been so busy

Here is the recipe
SPRING ROLLS WRAPPER
Ingredients
1.25 cups of water
1 cup of all purpose flour
3 tablespoon corn flour
1/4 teaspoon salt

Procedures
โ€ข. Mix all dry ingredients together and add water

โ€ข. Mix thoroughly with a spoon or a whisker until you get a flowing consistency without any lumps(pancake like)

โ€ข. Heat up a non-stick pan, lower the heat ,grease the pan

โ€ข. Add 2 tablespoon of the batter into the greased pan

โ€ข. You have to lift the pan from the stove top and spread the batter. You can also rotate or tilt the pan for the batter to spread

Remember that the spring rolls sheet has to be thin. If they become thick, they will break while rolling and sealing.

โ€ข. Cook just one side till it curl up and it's translucent.

โ€ข. Place the spring roll wraps in a plate with the cooked side facing up

โ€ข. Allow the wraps to cool, then stack them up with the cooked side facing up.

SPRING ROLLS FILLING
Ingredients
โœ“.Ground turkey( could be substituted with ground beef or grounded chicken)
โœ“ .1/4 cup of medium sized carrots (shredded)
โœ“.3/4 cup of cabbage(shredded)
โœ“ .1/2 medium sized onions (diced)
โœ“. 1 teaspoon of black pepper
โœ“. 1 teaspoon of hot chilli pepper
โœ“. 1 stock cube
โœ“. 1 teaspoon of curry powder/ curry masala
โœ“. Oil (for deep frying)

Spring roll sealing paste
1 tablespoon of flour and ยผ cup of water

Procedures
Add in the oil and onions in a large frying pan... Stir fry till it's translucent

Add hot chilli pepper, black pepper, curry powder, salt and stock cube and stir, mix till it's well combined

Add ground beef/ground turkey ๐Ÿฆƒ... Stir fry till it's well cooked and changes colour to brown

Add in the shredded cabbage and carrots when the water is dry. Be sure to keep stirring to make sure the content of the pan do not burn. Mix and turn off the heat to prevent the veggies from over cooking.

Good day everyone
Here's a quick recipe for you


Ingredients
125g of all purpose flour
6 teaspoon of sugar (to taste)
1/4 teaspoon of salt
1cup of water(more or less)๐Ÿฅ›
2 medium sized eggs๐Ÿฅš๐Ÿฅš
A sachet of powdered milk
1/2 medium sized onion, chopped(optional)๐ŸŒฐ
Grounded pepper(optional)๐ŸŒถ๏ธ
2 tablespoon of margarine/butter or vegetable oil

Preparation
โ€ข In a small bowl, whisk the eggs thoroughly -set aside

โ€ข Sieve the flour in a separate medium sized bowl. Dissolve the powdered milk in the cup of water.

โ€ข Make a well in the middle of the flour and pour in the milk. Mix till you get a smooth consistency.

โ€ข Gently add the whisked eggs, sugar, salt and mix to get a smooth runny batter (the more milk /egg you add , the thinner your pancake ๐Ÿฅž would turn out)

โ€ข Add the chopped pepper and onions, mix to incorporate

โ€ข Heat a non-stick pan and add a tracking of butter/margarine or vegetable oil; spread evenly over the pan surface.

โ€ข Pour in two cooking spoons full of the batter and swirl to spread evenly. Cook for 1 minute on low heat and flip over for further 30 seconds.

โ€ข Transfer to a flat plate and repeat the process till the batter is used up.
Serve your pancakes ๐Ÿฅž hot with any beverage ๐Ÿฅก๐Ÿน๐Ÿธ

How many of you have heard of Plantain Frittata!!!
It's a very delicious delicacy๐Ÿ˜‹
Trust me, you'll love it๐Ÿ˜

Ingredients
Ripe plantains
Vegetable oil
A bulb of onions
1/4 Curry powder and thyme
Seasoning cube
Ground pepper
Chopped sausage(optional)
Bell pepper
Salt to taste

Let's check out the procedures

Start by frying ripe plantains on both sides for 3-4 minutes or until lightly brown

In a frying pan, heat up oil on medium heat , add onions and stir for about 30 seconds

Add fresh tomatoes , stir and leave to cook for 2 minutes.

Next, add curry powder, thyme, seasoning cube, ground pepper, chopped sausage (optional) and salt to taste.

Stir and leave to cook for 3 minutes on medium heat.

Afterwards, add Bell pepper, stir and allow to cook for 2 minutes, then take off heat and set aside.

In a bowl, whisk eggs and sauted vegetables, season with salt and pepper if necessary. Stir to combine.

Coat frying pan with cooking spray, melted butter or vegetable oil and place on the lowest heat.

Pour egg mixture into the frying pan

Lay friend plantains gently on top of your egg mixture

Tightly, cover frying pan with a lid. Please ensure the heat is set to the lowest.Leave to cook for 20 minutes.

From the lid, you will notice the egg mixture will start to firm up. Don't worry, it won't burn.

Afterwards, take off the lid and leave to sit for 5 minutes before serving...

Let's learn something new today

BURGER
Ingredients
8 cups of raw groundnut
6 eggs
6 cups of flour
1 cup of sugar
Nutmeg(optional)
1/4 teaspoon baking powder
Pinch of salt
Vegetable oil
1/3 cup powdered milk
1/2 teaspoon vanilla flavour (or desired flavour)

Procedure
Whisk eggs in a bowl, add sugar, vanilla and salt, whisk well

Pick groundnut to remove bad ones. Pour in warm water and sieve to dry, to ensure no dirt on the groundnut.

Mix flour, milk powder, nutmeg and baking powder in a bowl and set aside

In a larger bowl, pour in the groundnut. Take a tablespoon and sprinkle some of the whisked eggs on the groundnut and shake.

Next, sprinkle the the flour mixture and shake again

Repeat sprinkle of egg and flour until the groundnut in the bowl are fully coated

Fry in hot oil until golden brown and quickly take it off the heat else. Remember, coated groundnut begins to taste burnt

Allow to cool and store in an airtight container for snacking anytime .

Ingredients
Flour- 300g
Sugar-200g
Butter-300g
Eggs-7 to 8 medium size
Flavour- ยฝ tablespoon
Milk - ยผ cup (optional) {remember, milk reduce the lifespan of the cake)
Baking powder- 1 teaspoon
Preservative(powdered) - 1 teaspoon (too much can give your cake a bitter taste and harden the texture).

PROCEDURE
1. Preheat oven...
2. Mix/ Cream butter and sugar till white, fluffy and light
3. Sieve the flour into a sizeable bowl, add baking powder, preservative, powdered milk and mix together
4. Whisk eggs until light and foamy
5. Gradually pour whisked eggs into the creamed butter, add flavour and mix using a turning stick
** Will drop the picture of the turning stick soon**
6. Add the flour to the butter mixture and mix thoroughly till it's free from crumbs, and smooth
7. Pour batter into already greased pan, smoothen the side and edges to avoid a lop-sided cake.
8. Place pan in the preheated oven ,on low heat for about 45 minutes or until done.
9. The cake is done when a knife or a spatula is inserted through the middle and it comes out clean.

I'm so sorry ๐Ÿ˜ช I haven't been available for sometime now. Been busy from one church programme to another. But I'm back now, by God's grace.
Let's learn something new today.

ROLLS
Ingredients
โœ“. 2 cups of flour
โœ“. 1 egg
โœ“. 1 teaspoon baking powder
โœ“. ยผ teaspoon of salt
โœ“. ยฝ teaspoon nutmeg
โœ“. 2 tablespoon margarine
โœ“. 8-9 tablespoon water
โœ“. 5 eggs boiled
โœ“. 2 tablespoon sugar

Procedure
1. In a large bowl, mix flour, baking powder, salt, sugar and nutmeg together
2. Use your fingers to blend the margarine into the flour until it's crumby.
3. Add the whisked/ beaten eggs and mix together
4. Begin to introduce water a little at a time and work the dough, till the doing is soft and sticky but still workable
5. Work the doing for about a minute , then leave and let it rest for about 15-20 minutes
6. Work the dough for a couple of seconds to a minute and divide it into...( any amount u wish to divide it into)
7. Tightly wrap the dough around each eggs...
8. Fry on medium heat, turning over and over again till it's golden brown.
NOTE: With high heat, the eggroll could get burnt while undone within
When the heat is too low... Your dough can absorb oil.
So the heat should be moderate ( medium).

FISH ROLLS

Ingredients
(Fish rolls dough)
3 cups of flour
ยฝ tablespoon of yeast
3 tablespoon of sugar
3 tablespoon of butter
โ…“ teaspoon of baking powder
Lukewarm water
Pinch of salt

FISH ROLLS FILLING
1 fresh fish (Titus)
2 medium sized onions
Chilli pepper to taste
2 teaspoon curry masala
ยผ teaspoon garlic powder
Vegetable oil for frying
1 cube of seasoning
1 teaspoon of chilli powder
Salt to taste

PROCEDURE
1. Mix yeast and sugar in warm water and set aside

2. Combine flour, baking powder, butter and salt in a down and mix; add yeast mixture to the flour mixture to form a pliable dough.

3. Place rinsed fish in an empty pot. Add sliced onions, salt to taste, curry masala, garlic powder and chilli powder. Add little water and leave to cook for about 10 minutes.

4. Remove the fish and remove the bones. Crush and mash up the fish, set aside.

5. Heat up 5 tablespoon of veg. Oil in a pot and add the mashed fish. Add blended chilli pepper, onion, seasoning and stir fry the content for 5 minutes on low heat. Set aside and allow to cool.

6. Divide dough into small sizes of a ball, take one ball of dough and roll out with a rolling pin. Ad the fish filling and roll up. Seal the rolls with finger tip dipped in water/flour mixture (binder) and fry till golden brown.

Your yummy๐Ÿ˜‹๐Ÿ˜‹ fish roll is ready.
Serve with chilled fruit juice. Enjoy!!!
