Recipe for
coconut fried Rice

∆ Parboiled rice
∆ coconut
∆ onions
∆ stem leeks
∆ cloves garlic
∆ Red bell pepper
∆ carrots
∆ green beans
∆ sweet corn
∆ sweet peas
∆ coconut oil
∆ seasoning
∆ white pepper (optional)
∆ salt
∆ butter (optional)

Instructions
I just summarize everything before give you in details
✓ blend your coconut and subtract the coconut milk from it in a bowl.
✓ chop your onion, stem leeks, red bell pepper, carrot, green beans,and mince your cloves garlic, .in different plates.

Procedure:-
✓ wash your rice properly two to three times. Set outside
✓ in a pot, put in the wash rice, and your coconut milk add your onion and seasoning cubes. Bring to a boil on high heat.
✓ after cook for about 10 minutes reduce the heat to medium and allow it to cook for 5 minutes turn off your heat and let it rest (cold) for some time.
✓ in another pot, pour in the coconut oil and some of your butter and set to heat up for about 3 minutes add your onion and saute until fragrant. Add your garlic and saute until fragrant.
Add the leeks and stir for about ½ to 1 minutes.
✓ Add the carrots and stir,add the green beans and stir. Add the bell peppers, sweet corn and peas (green veggies) then stir properly
✓ sprinkle a pinch of salt over it and add your write pepper and stir properly.
✓ Add rice to the sauteed vegetables a little at a time, mixing each time you add your rice.
✓ add your butter and cover in a low heat allow it to steam for about 5- 8 minutes then turn off the heat and serve.

NOTE:-
If you can't blend your coconut yourself you can get canned coconut milk in the supermarket.

INGREDIENT
CHICKEN PIE
✓ 1kg Flour ,
✓300g minced chicken ,
✓Half teaspoon of salt ,
✓2 teaspoon of baking powder ,
✓500g Butter ,
✓Water ,Seasoned cube ,
✓4 medium size carrots ,
✓4 medium size irish potatoes ,
✓2 medium size onion ,
✓2 eggs ,Vegetable oil

STEP 1 : Preheat your oven .

STEP 3 : Add seasoned cube, salt, onion, curry and thyme to the minced chicken. Leave it in the fridge for like 30 minutes for it to marinate.

STEP 4 :Boil the potatoes and carrot in water for like 5 minutes. Add salt to taste. Pour into a sieve to remove the water and set aside.

STEP 5 : Fry the chicken with vegetable oil add about 100ml of water and continue to stir fry it for like 10 minutes. You can add a little more water if needed.

STEP 6 : Pour the potatoes and carrots and continue to fry it.

STEP 7 : Add about 50ml water to 4 teaspoon of flour in a cup and stir. Pour the content into the meat and continue stirring for another 2 minutes

STEP 8 : Pour the flour into a bowl, add baking powder and a little pinch of salt. Mix with your hand properly. Add butter bit by bit and mix with your hand until you finish all the butter. Add about 150ml water and continue mixing with your hand until stiff dough is formed.

STEP 9 : Rub butter on the oven tray. Break the egg in a plate and mix it. Roll out the dough with a roller to about 6mm thickness.

STEP 10 : Use a cutter to make a round cut on the roll out dough. Scoop some of the chicken sauce into the center of the round cuts, Rub the egg on the inside edge of the cut chicken pie dough. Fold it and use your fork to make a design at the edge of each chicken pie.

STEP 11 : Arrange the chicken pie into the oven tray and put it inside the preheated oven to bake for like 30 minutes. A golden yellow chicken pie is achieved.

PANCAKES

INGREDIENT PANCAKE
✓2 Cups (300g) of All Purpose flour,
✓ 3 teaspoon of baking powder ,
✓1 glass cup of milk ,
✓3 medium size eggs , ✓4 tablespoon of sugar , ✓Half teaspoon of salt , ✓100g of butter ,
✓1 cup of water ,
✓1 teaspoon of dry grounded pepper(optional) , ✓Vegetable Oil

STEP 1 : Melt the butter by pouring inside the frying pan and heat it up with a medium heat either with a stove or gas cooker.

STEP 2 : Add the flour, milk, baking powder, sugar, salt, half cup of water and mix properly till all the lumps disappear.

STEP 3 : Mix the eggs, another half cup of water with the melted butter properly till it is smooth. Then pour it inside the already mix flour. Then mix properly

STEP 4 : Set aside for 20 minutes to rest if you have time, or start cooking immediately if there is no time.

STEP 5 : Set a frying pan over a medium heat and add a few drops of vegetable oil. When hot, add a table spoon of pancake into the frying pan. Fry for like 1min, but turn each side of the pancake until a golden brown colour is achieved. Do that for the remaining pancakes.
