recipe for preparing Ghanaian Groundnut Soup. Here's how you can make it:
Ingredients:
- 1 1/2 cups roasted peanuts (groundnuts), peeled and ground
- 1 onion, chopped
- 2 tomatoes, chopped
- 2-3 cloves of garlic, minced
- 1 inch piece of ginger, minced
- 1/2 teaspoon of cayenne pepper
- 1 teaspoon of paprika
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cumin
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of thyme
- 4 cups of vegetable or chicken broth
- 1 can of tomato paste
- 1/4 cup of palm oil or vegetable oil
- Salt and pepper, to taste
- Optional: cooked chicken, fish, or beef
Instructions:
1. In a blender or food processor, grind the roasted peanuts into a smooth paste. Set aside.
2. In a large pot, heat the palm oil or vegetable oil over medium heat. Add the chopped onions and cook until translucent.
3. Add the minced garlic and ginger to the pot, and cook for another minute.
4. Stir in the chopped tomatoes, tomato paste, and spices (cayenne pepper, paprika, coriander, cumin, turmeric, thyme) and cook for a few minutes until fragrant.
5. Pour in the vegetable or chicken broth and bring the mixture to a simmer.
6. Add the ground peanut paste to the pot, stirring well to combine. Let the soup simmer for about 15-20 minutes, stirring occasionally.
7. Season the soup with salt and pepper to taste. If using cooked meat, add it to the pot at this stage and let it heat through.
8. Serve the groundnut soup hot with rice, fufu, or your preferred side dish.
