Ingredients:
- 1 1/2 cups roasted peanuts (groundnuts), peeled and ground

- 2-3 cloves of garlic, minced
- 1 inch piece of ginger, minced
- 1/2 teaspoon of cayenne pepper
- 1 teaspoon of paprika
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cumin
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of thyme
- 4 cups of vegetable or chicken broth
- 1 can of tomato paste
- 1/4 cup of palm oil or vegetable oil
- Salt and pepper, to taste
- Optional: cooked chicken, fish, or beef

Instructions:
1. In a blender or food processor, grind the roasted peanuts into a smooth paste. Set aside.
2. In a large pot, heat the palm oil or vegetable oil over medium heat. Add the chopped onions and cook until translucent.
3. Add the minced garlic and ginger to the pot, and cook for another minute.
4. Stir in the chopped tomatoes, tomato paste, and spices (cayenne pepper, paprika, coriander, cumin, turmeric, thyme) and cook for a few minutes until fragrant.
5. Pour in the vegetable or chicken broth and bring the mixture to a simmer.
6. Add the ground peanut paste to the pot, stirring well to combine. Let the soup simmer for about 15-20 minutes, stirring occasionally.
7. Season the soup with salt and pepper to taste. If using cooked meat, add it to the pot at this stage and let it heat through.

Ingredients:
- 1 pound boneless, skinless chicken thighs
- 1/4 cup plain yogurt
- 3 tablespoons olive oil

HOW TO PREVENT YOUR PLANTAIN FROM RIPENING FAST

1. Tie the head of the plantain with polythene /plastic bag, foil etc. Anything that'll prevent air(oxygen) from getting to it. Then store in a cool dry place

2. Refrigerate or freeze put your unripe plantain in a nylon bag and place in a fridge or freezer. It lasts longer in the freezer than in the fridge.

3. Soak the unripe plantain in a bowl of water. Ensure the whole plantain especially the stem is properly covered with the water. You can change the water every two days to keep it fresh.

1. Start by roasting the peanuts (if they're not already roasted). Preheat your oven to 350°F (175°C). Spread the peanuts in a single layer on a baking sheet and roast them for about 10-12 minutes until they turn golden brown. Keep an eye on them to prevent burning.

2. Allow the roasted peanuts to cool down for a few minutes. If the peanuts have skins, you can rub them together in a clean kitchen towel to remove the skins. However, leaving the skins on will add a slightly more rustic texture to the peanut butter.

3. Transfer the roasted peanuts to a food processor or a high-powered blender. If you prefer a chunky peanut butter, set aside a handful of peanuts to stir in later.

4. Process the peanuts in the food processor or blender for 1-2 minutes. Initially, the peanuts will turn into crumbs, then gradually start to clump together.

HOW TO MAKE COCONUT OIL

Step 1- Crack the coconut open, extract the coconut meat from the shell. Blend the coconut meat and filtered water in a high speed blender for 1-2 minutes, Although there will still be lots of coconut pulp and also coconut milk.

Step 2- To separate the mixture, simply use a nut milk bag and allow the homemade coconut milk to gather in a large bowl. The remaining coconut pulp can then be dried ot and used within all sorts of cake recipes

Step 3- Pour the milk into a large heavy based pan and heating on low, consistence temperatures, you will begin to see coconut oil forming on the top of the mix. The low temperature heating process can easily take 1-2hours, if not more. So just be patient!

Step 4- While heating the water will evaporate from the coconut milk mixture, The coconut will begin to get crumbly in texture and solidify. This is when you will begin to notice the oil

Tips
* The key to make a perfect homemade coconut oil s the low, consistent temperatures. if you try to use higher temperature to cut down the time it takes to make this oil then you run the risk of ruining the oil. Unfortunately, high temperature can (and will) change the composition and property of the coconut oil. Don't be tempted to put up the heat too much.

* Coconut oil can be substitute for vegetable oil (some African countries cook with coconut oil)

* Coconut oil can be added to your body cream, hair or apply directly on your skin or hair

How to make Ewa Agoyin /Ewa Agoyin sauce

Ingredients Ewa Agoyin Beans:

3 cups of black eyed beans or white beans
Salt to taste
Water, enough to boil the beans

Ingredients Ewa Agoyin Pepper Sauce:

1 cup of palm oil
2 medium sized onions, 1 should be thinly sliced
¼ cup of dried shombo peppers
1 teaspoon of minced ginger
2-3 pieces of Cameroon pepper
2-3 tablespoons of ground crayfish
1-2 dried bell pepper (tatashe)
Seasoning cube(s) to taste
Salt to taste


Directions:

Soak your dried shombo and bell peppers in hot water possibly overnight or for about 6hours till they get plump.

Slice one of the onions then add your plump dried peppers, minced ginger and Cameroon pepper to a blender. Add a bit of water and blend coarsely (it shouldn’t be smooth, let the seeds still show). Transfer into a bowl and set aside.

Measure your beans into a pot, about 6-8 cups of water and boil till it’s very soft. This should take about 2 hours. When tender, add a pinch of salt and mash with a hand mixer or masher.

In a large pan, add your palm oil and cover with a tight lid then allow to bleach for about 10-12mins.

Reduce the heat to low after bleaching then add your thinly sliced onions and allow to fry till it’s caramelise or slightly burnt.

Add your blended pepper mix into the pan, maintaining a low heat. Add your ground crayfish, seasoning cube(s) and salt to taste. Allow to fry for about 45mins, stirring from time to time. You should get a black colour but not burnt sauce.

Turn off heat and serve your Ewa Agoyin with Agege Bread preferably

How to process sweet potatoes to flour

3. Soak the sweet potatoes for 5days and be sure that the water is above the sweet potatoes each day.

4. Change the water daily. Drain the water from the sweet potatoes and put in a fresh water every day. This process takes out the sweetness from the potatoes

5. On the fifth day, the sweet potatoes will be soft.
Drain water from it and put the sweet potatoes in a sack.

6. Use a big stone or any heavy object to apply pressure on the sack to completely drain the water

7. When the water is drained, Sun dry the sweet potatoes for days till it's very dry or use dehydrator.

8. Take the sweet potatoes to the engine and grind

3 cups raw peanuts (groundnuts)
3 eggs
3 cups flour
2 or 3 tablespoons sugar
Pinch of salt
2 cups vegetable oil

Instructions👇
You can use already roasted groundnuts (peanuts). But if you have raw peanuts, you can roast or fry them yourself. For extra flavor, I start the frying process by first soaking the peanuts in hot water for 15 minutes, then I drain and dry the peanuts for 1 hour. Next, I pour in a nice layer of table salt in a pan and then I fry (roast) the peanuts in the salt until they are brown. Sieve out the peanuts in a tray and leave them to cool.
Break the eggs into a bowl and add the salt and sugar. Whisk together.
In a bigger bowl, pour in the roasted peanuts. Pour in 1 tablespoon of the whisked egg and toss the peanuts. Next, pour in 1 tablespoon of flour and toss.
Repeat the process until both the flour and the eggs are exhausted. This will give you finely coated peanuts.
Heat the oil in a pan and fry the coated peanuts until they are nice and brown.

Your yummy peanut burger is ready.

Variations
For extra flavor, you can add a drop of vanilla to the egg mixture.

You can also add 1 teaspoon of ground nutmeg and 1 teaspoon of powdered milk to the flour and mix.

2 sachet Noodles Spice
2 fresh habanero pepper dice
1 small onion dice
1 large carrot 🥕 julienne
1 large green bell pepper diced
2 tbsp vegetable oil
2 large eggs
2 tbsp vegetable oil for egg
Cooking Instructions
Step 1
Heat up a pot with a sachet of pure water, once its boiling hot, add 1 sachet of noodles spice and allow it cook for a minute before adding your noodles.
Step 2
Once your noodles is almost tender and the water is dry, remove from heat and set aside. Set another pot or frying pan on heat and once it's hot, add vegetable oil, once your veg oil is hot enough, add your onion and stir
Step 3
After a minute, add your pepper, remaining noodles spice, green bell pepper and carrot, and stir fry for another 3 to 4 mins.
Step 4
Pour in your already cooked noodles into your veggies stir and mix everything together. Stir and allow it cook for another 3 to 4 minutes, then remove from heat.
Step 5
To fry your plain eggs: Add your vegetable oil into a small frying pan, once your oil is hot, gently break your eggs into a bowl with the yolk and egg white still in tack, gently pour into your frying pan and flip over after a minute.
Step 6
Turn off heat, once you flip over; the heat from the pan will continue the cooking process. Serve and enjoy your meal.

Serve with fried eggs

Loaded Baked Potato Salad Recipe 😋😍
Full recipe:

✅ Ingredients:
°4 size potatoes
°1/2 c mayonnaise
°1/2 c sour cream
° 1/2 c shredded sharp cheddar cheese
° 4 tablespoons of crushed stone or yellow mustard (to taste)
° 1/4 c chives
° 8 thick slices of bacon, cooked, crispy and chopped
° Salt and freshly ground black pepper

✅ DIRECTIONS
In bowl, whisking mayonnaise, sour cream, also mustard to well blended. Adding 3/4 of chop chives with of salt and pepper. whisking to mix. Adding cheese / bacon (reserve some bacon for garnish). Covering mixture and let it cool for 30 minutes.
Peeling potatoes and cut them to halves / half pieces. Cook the potatoes in salted water until the fork softens. Strain and cool slightly. Fold the cooked potatoes into the cooled sauce. Garnish with remaining chives.
